Pumpkin Butter

I used approx. 4 cups of fresh pumpkin that I roasted and processed. I cut down the sugar amount, and used only 1/2 cup, and added 2 tablespoons of real maple syrup. I used about 1 1/2 cups of apple cider.

Wisconsin Slow Cooker Brats

This is our favorite potluck bbq recipe. I throw 17 brats into my huge crockpot & EVERYONE loves them after they are pulled off the grill! Thank you for such an easy recipe with such yummy results! I love the no fuss & easy ingredients that make my day much easier!!

Slow Cooker Lentil and Ham Soup

This is my favorite! I do a little bit of variation though. I up the veggies and ham about 1/2 cup each. I use 3 small cans of chicken stock fatfree/low sodium, and add one can of diced tomatoes, and leave out the tomatoe sauce. It is wonderful, I also cook it on high in my crockpot for about 3 hours depending on the lentils... a little longer if neccessary.

Pumpkin Flax Quickbread

This is my favorite recipe, I have made it several times this time with banana instead of pumpkin, 1 cup brown sugar, 1/3 cup wheat germ instead of wheat flour since I was out, and added 1/3 cup all purpose flour because I think I added too much bananas and it wasn't a very thick batter. Hope this helps someone out!! Enjoy the yumminess! Smile Always

Rempel Family Meatloaf

Healthier version of this awesome meatloaf turned out great! I used 1 pound of 99% fat free ground turkey in place of the 1 1/2 pound ground beef. In place of the steaksauce I used worchestershire sauce, I added a few dashes of Dave's hotsauce. I also strained the onions out of the soup mix and only used them like suggested by a Rempel family member in a previous review. Oh and I used a mixture of shredded cheese I had on hand. Thanks for the great reciped!!

Pumpkin Bread IV

Love this bread recipe but after reading many reviews decided to go for a healthier version. I used 4 cups whole wheat flour & 3/4 cup wheat germ in place of the flour;4 1/2 tsp. of pumpkin pie spice in place of all the spices; 1 1/2 cup applesauce in exchange for all of the oil; 3 cups of Organic Sucanat (free-flowing organic brown sugar in place of the regular sugar;and a 29 ounce can of pumpkin. I made muffins without muffin cups sprayed the pan with canola oil and baked at 350 for 20 min. Turned out good I am bringing them to a potluck at my son's school! YUMMY!

Banana Crumb Muffins

I made this yummy recipe with applesauce instead of oil, whole wheat flour instead of all-purpose, and brown sugar for the white sugar...Instead of muffins I made it into a loaf pan (I don't have a muffin tin) and baked on 350 degrees for 50-60 minutes (check w/knife) putting on the crumb topping in the last ten mintues.. TURNED OUT GREAT! Eating it now as I type!! hehe
