Beef Stroganoff III

Reviewed: Jan. 12, 2009
Oh so good! I love how this recipe does not include cream of something soup! This tastes homemade and comforting. My hubbby is not a fan of mushrooms so I left them out. Also I took help from the store and I used the already cut up ready to stirfry beef from the meat dept. It was so good over buttered egg noddles. I'm going to make this for my mom when she comes to visit next week. :)

Busy Day Chicken Rice Casserole

Reviewed: Nov. 4, 2008
I grew up with my mom making this meal and it is just too good! I have a very picky hubby so yes, I did make some modifications. First off I browned the chicken breasts in olive oil on high heat (just my preference), I only used cream of celery soup (he hates mushrooms), did not add the can of mushrooms, and used the veggie soup mix instead of the onion mix. Oh, I sprinkled seasoning salt on top before I baked it. It was a comforting meal on a cold rainy night, and best of all my picky guy loved it!

Baked Potato Soup III

Reviewed: Jun. 29, 2007
This soup is way good! I made only a couple of changes to the recipe; first I cooked the bacon in the same pot I used to make the soup, I drained most of the fat and then added the butter and made the roux. I then deglazed the pan with 2 cups of low sodium chicken broth followed by only 4 cups of milk. I think the bacon and chicken broth gave the soup great flavor. I have tried about 4 other recipes and they always come out tasting like mashed potato soup. I will most definitely make it again.
