Fudgy Peanut Butter Brownies

So good! I had a box of brownie mix I had to use, so I just used the peanut butter filling and frosting parts of this recipe. However, I did make the brownies with applesauce and egg substitute. Absolutely yummy! My husband was very happy.

Sugar Snap Peas

So good! I just made these tonight. I don't have shallots, so I used 1/2tsp of garlic. I cut back on the oil just a bit. And like others, I just tossed all the ingredients in a bowl and put them on the baking dish. The cooking time is perfect for still crisp peas. Thank you!

Baked Dijon Salmon

I don't often give recipes 5 stars, but this one deserves it. It is so quick and easy to prepare and absolutely delicious! The only change I made was to omit the butter from the honey mustard mixture because I'm watching my saturated fat intake. The good news is you save a lot of fat that way and it is still awesome! I will definitely add this to my recipe collection.

Roast Sticky Chicken-Rotisserie Style

This is a great combination of seasonings for a chicken. I've made this recipe as instructed with a whole chicken (I did adjust the cooking time because I didn't have 5 hours. I cooked the chicken at 325 for about 1.75 hours (it was a small bird). The seasoning is also great on boneless skinless chicken breasts. My husband really enjoyed that preparation. Oh - I don't have white pepper on hand, so I just increase the amount of black pepper.

Molten Chocolate Cakes With Sugar-Coated Raspberries

I love the recipe. When I'm craving serious chocolate, this is my "go to". It's quick and easy. It's also really flexible for the type of chocolate, I've used ghiradelli dark chocolate, semisweet chips, and even some milk chocolate. I think a mixture of chocolate makes the best cake, but all kinds work. Oh, I usually don't have the raspberries, so I just serve with vanilla ice cream or whipped cream. When I make it for company, I'll just heat up some seedless jam and thin it out with OJ or grand marnier to make a sauce to drizzle it with.

Mini Pumpkin Muffins with Orange Drizzle

Awesome muffins! So moist. I only had pumpkin pie spice, but it didn't make a difference. I didn't make the orange drizzle, but I don't think it needed it. Oh, I didn't have a mini pan, so I just made 18 regular sized muffins (only 5 minutes more in the oven). And, to lower the fat, I used 1 egg, 1/2 cup egg substitute and 3 Tbsp of applesauce in place of half of the oil. And the muffins were still divine. My husband, who isn't a fan of muffins, gobbled them down.

Tomato-Cream Sauce for Pasta

Overall, this is a very good sauce. I added 4 oz of pancetta and changed the diced tomatoes to tomato sauce (personal preference). After that, I think it had WAY too much basil; it was overpowering. I will definitely reduce that to 1.5 teaspoons next time. With that change, I will definitely be making this again. Very easy.

Apple Crisp II

I wish I could give 4.5 stars. This was a delicious apple crisp. I halved the recipe and it fit perfectly into an 8x8 pan. I used half brown sugar and half white sugar on the apples. I had cut the water two tablespoons, but after baking it was definitely too runny. Next time I'll leave out the water or add more flour to the apples. But the flavor is definitely right on. It was my husband's first time having apple crisp and he is a big fan of it now!

Fluffy Pudding Frosting

This was great and easy! I really dislike overly sweet frostings, so this was perfect. I did have some problems getting it to spread well, but that might have been a timing issue. I had to make the frosting before the cake was completely cooled, so it sat in the fridge for a while before I frosted the cake.

Marinated Grilled Shrimp

This was so good! I didn't have tomato sauce, so I used some marinara sauce, but the taste was delicious! My husband, who isn't a big fan of shrimp, liked it as well. Definitely high praise from him. I really liked how the ingredients are things I always have on hand.
