Guinness® Corned Beef

Sadly, I have to say I didn't enjoy this recipe at all. After reading previous reviews, I reduced the sugar to 2/3 cup. It was still exceedingly sweet. The meat was tender, but the flavor was not what I expected after reading all the reviews. My husband, who has never had corned beef before, didn't like it at all.

Sugar Snap Peas

So good! I just made these tonight. I don't have shallots, so I used 1/2tsp of garlic. I cut back on the oil just a bit. And like others, I just tossed all the ingredients in a bowl and put them on the baking dish. The cooking time is perfect for still crisp peas. Thank you!

Slow Cooker Rosemary and Red Pepper Chicken

This is good, but with modifications. After reading other reviews I added more liquid, specifically: 1/2 cup of white wine, 1/2 cup pasta sauce, 1/2 chicken broth. I think the flavor of the sauce was really good with all the herbs. But I cooked the chicken for only 3 hours on low and it was dry! Bottom line, it's a decent recipe and we'll eat the leftovers, but it's not going to be put in my regular recipe rotation.

Apple Crisp II

I wish I could give 4.5 stars. This was a delicious apple crisp. I halved the recipe and it fit perfectly into an 8x8 pan. I used half brown sugar and half white sugar on the apples. I had cut the water two tablespoons, but after baking it was definitely too runny. Next time I'll leave out the water or add more flour to the apples. But the flavor is definitely right on. It was my husband's first time having apple crisp and he is a big fan of it now!

Baked Dijon Salmon

I don't often give recipes 5 stars, but this one deserves it. It is so quick and easy to prepare and absolutely delicious! The only change I made was to omit the butter from the honey mustard mixture because I'm watching my saturated fat intake. The good news is you save a lot of fat that way and it is still awesome! I will definitely add this to my recipe collection.

Tomato-Cream Sauce for Pasta

Overall, this is a very good sauce. I added 4 oz of pancetta and changed the diced tomatoes to tomato sauce (personal preference). After that, I think it had WAY too much basil; it was overpowering. I will definitely reduce that to 1.5 teaspoons next time. With that change, I will definitely be making this again. Very easy.

Salsa Chicken

Very good. I used chicken tenders. I didn't have any taco seasoning because most brands use MSG, but I made my own with some chili powder, cumin, orgeano, & salt & pepper. The chicken was so moist. It was a good change. I have to be honest - I do something similar in the slow cooker and then shred the chicken meat for tacos/burritos. But this is a good variation for when I have a lot less time.

Honey Mustard Grilled Chicken

I made this last night with some chicken tenders. I let them marinate for about an hour. I wasn't all that impressed. I might hang on to the recipe to keep as a dip for the breaded chicken I make.

Scottish Shortbread I

My mother requested some shortbread for a christmas gift. I've never been a big fan of the Walker's shortbread cookies, so I'm not entirely sure what good shortbread is. That being said, I liked this recipe. Since I was testing a recipe, I halved the recipe. It was really easy to make. I just made drop cookies. They were so good just a few minutes out of the oven. Delicate cookies. I sent the rest to work with my husband so I wouldn't eat the whole batch by myself.

Fluffy French Toast

Very nice. I halved the recipe and to reduce fat I used 1/4 cup egg substitute to replace one of the eggs. I was really impressed that the proportion was exactly what I needed for 6 pieces of bread (I used pepperidge farm cinnamon toast bread).

Mini Pumpkin Muffins with Orange Drizzle

Awesome muffins! So moist. I only had pumpkin pie spice, but it didn't make a difference. I didn't make the orange drizzle, but I don't think it needed it. Oh, I didn't have a mini pan, so I just made 18 regular sized muffins (only 5 minutes more in the oven). And, to lower the fat, I used 1 egg, 1/2 cup egg substitute and 3 Tbsp of applesauce in place of half of the oil. And the muffins were still divine. My husband, who isn't a fan of muffins, gobbled them down.

Chocolate Pudding Cake II

This is decent dessert that is super easy to put together. The serving size is definitely off in a 9x9 pan it's really 6 servings. I didn't have any baking cocoa on hand, so I used Ghiradelli hot chocolate mix & cut back on the sugar. Yes, I know it's not the same, but it worked. I wasn't a big fan of how the brown sugar became part of the cake top. There were spots that were very sweet because of it. I probably will make this again because of the ease and it is a low fat dessert option.

Spicy Honey Mustard Pork Roast

Way too much pepper. I like my food well seasoned, but the pepper left such a burning sensation on my tongue I didn't care for it. And I only used 2 teaspoons of pepper.

Holiday Chicken Salad

I made this for a potluck at my husband's job. I had to leave out the nuts due to allergies and green pepper because husband hates them. That being said, this is a really good chicken salad. Much better than a plain mayo & mustard combination. His coworkers raved about the sandwiches, so that's good. I think next time I'll cut back on the paprika. It just made the whole thing a bit too pink looking for me. Will definitely keep this for the future.
