Slow-Cooked, Texas-Style Beef Brisket

I cooked for only 6 people so my brisket weighed only 2.5 lbs. I adjusted the amounts for everything else to suit the size including the time. I cooked it on high for 2 hours in my crockpot, and then I turned it to Low for 6 hours. It was tender and DELICIOUS!

Apple Beet Salad

This salad was a hit at Mother's Day. We found it refreshing and a perfect side to the grilled chicken. We used just enough vinaigrette dressing to coat to give this a pickled flavor.

Seven Layer Salad

Peppered Bacon and Tomato Linguine

I made this exactly as shown, and it's o.k. I think next time I will use fresh tomatoes and saute mushroom slices with the onion and garlic. I would also like to toss some peas into dish.

Best Ziti Ever

This turned out very delicious. Nothing like the dried out baked ziti I have had every other time. My kids would prefer ground beef used instead as it gives a milder flavor.

Chicken Enchiladas II

I used the corn tortillas and exchanged the milk for enchilada sauce as another reviewer suggested. My husband said they were the best enchiladas ever! I couldn't have done it without the original recipe to start from. I think I can safely remove any other versions from my recipe box.

Slow Cooker Italian Beef for Sandwiches

Living in Florida I miss my hometown Chicago. This recipe helped bring a bit of that home. I followed a few suggestions from other reviewers such as beef broth instead of water and 2 pkgs of Italien dressing seasoning. Everything else followed the recipe exactly. This was a HUGE hit with my family(even the kids!). Can't wait to eat the leftovers.

Awesome Chicken and Yellow Rice Casserole

This is delicious. I made it exactly as the recipe stated. The only thing I will probably change is to use chicken breasts since we prefer white meat. However, using the whole chicken is cheaper on the budget.

Lemon Sugar Tea Cookies

These are WONDERFUL! I used 2 tsp. of lemon extract because I like a definite "lemony" taste. However, everything stayed the same. It is so good, we ended up making a double batch. They are a nice contrast to the heavier variety of cookies. The kids and I made these for Christmas, but I foresee making these for Easter.

I fixed this recipe exactly as listed except I used penne pasta. My family was VERY happy with it. The sauce definitely thickens when allowed to rest once it is combined with the pasta.

Caramel Apple Pork Chops

I took the advice of a previous reviewer and marinated the chops all day. The pork chops were greatly enjoyed by everyone. My husband said, "good pork chops" and he hates pork chops. I think I might try using apple pie filling for those days when I want a quick dinner solution.

Anna's Chocolate Chip Cookies

First time I have made cookies from scratch, and they came out DELICIOUS. The cookies stayed soft for the week they lasted. The best was hearing my sons friend say, " Wow. Your house really smells good."
