My mother-in-law who was born and grew up in Georgia probably would not consider this cornbread. It is more like a cake! It is not the type of cornbread that goes into the cornbread dressing (that was why I made the cornbread to begin with). But it is so yummy I am eating it with my afternoon tea! It is the first time I even attempt to eat cornbread after it becomes cool. I have finally found the kind of cornbread that would make all my non-cornbread eating friends in Tokyo love this "southern" staple.
