Becki's Oven Barbecue Chicken

Thanks for this recipe. It's a keeper! I made it for "girls night" this past Tuesday and everyone loved it. I sprayed the pan before putting everything in it and it was easy to clean afterward despite all the sauce.

Dessert Crepes

Thanks for such a wonderful recipe and also to those suggesting the addition of some vanilla. This will now be my standard dessert crepe recipe. A quick shot of Pam between crepes made them easy to swirl to cover the pan and to flip. We had a few friends over last night and I made a dessert crepe buffet. I set out a plate of crepes with parchment paper in between them. Around the table I set out bowls of chopped strawberries, a quick and easy-to-make blueberry sauce, spiced apples (just sauteed chopped apples, butter, cinnamon and nutmeg), sliced bananas, a jar of Nutella, a bowl of ricotta cheese that I'd added some vanilla and icing sugar to, a small ramekin of toasted walnut pieces, another with powdered sugar, a bottle of caramel drizzle and a bowl of whipped cream. Everyone made up their crepe as they liked. Great for people watching calories because the option is there to simply have a fruit crepe, but it's hard to resist whipped cream. I made extra crepes and froze them in Ziploc bags so we'll have crepes on hand for future desserts/breakfasts. Thanks again for a keeper!

Lentil and Sausage Soup

This will be one of our regular soups from now on. I'll try it with spicy Italian sausage next time for a change but this version was yummy just as is.

New Red Potato Salad

Spinach and Tortellini Salad

A winner! I followed the advice of others and used fresh baby spinach which worked out perfectly. Instead of a vinaigrette I used a good quality creamy Italian dressing that I had just bought but only used half the amount called for in the recipe and I found it was "wet" enough. I've made it three times since making it the first time on August 20.

Meatball Nirvana

Made exactly as called for. My husband and I both loved the heat in them but I'd cut back a bit if I were making it for others with a less spicy palate. Delicious with some spaghetti sauce on a crusty roll.

Nova Scotia Blueberry Cream Cake

I made this cake last night for my sister and brother-in-law's birthdays. Instead of using blueberries I made it with strawberries, chopping them into small pieces. It was fabulous! Don't skip the whipped cream on the top - I think it's a necessity. Thanks for a dessert recipe I'll use over and over.

Barley Bake

Absolutely delicious! I had a white rice recipe which was very similar, using green onions and pine nuts. This is every bit as tasty and way more nutritious so I'll be using it from now on as a side dish instead of rice. Thanks for such a wonderful recipe. I've never used barley in anything other than soup before.

Special Turkey Gravy

Delicious and easy. I made exactly as written, except that I used Campbell's low sodium chicken stock instead of turkey stock and didn't add any water. I might try to make it slightly thicker next time by adding a bit less stock.

Easy and Elegant Pork Tenderloin

So easy and quick to prepare. A definite make-again. I followed the directions of the first reviewer since I didn't think there would be enough flavour just using bread crumbs and we loved the zing the Dijon mustard added. Didn't have Panko on hand so I just used Italian seasoned bread crumbs instead.

Cauliflower-Cheese Soup

Delicious soup. I did as the first reviewer suggested and left out the butter, added chicken broth instead of water and used skim milk to cut calories. I didn't use any potato, just added extra cauliflower instead and used low fat cheese. I used the immersion blender to blend everything together in the pot on the stove. It was yummy. I didn't know if it would freeze well due to the cheese and creaminess of the soup but I froze the leftover soup and it was perfect a couple of weeks later.

Kalamata Pork Tenderloin with Rosemary

I'd give this one 5 1/2 stars if I could. Very elegant. My husband said this should be a standard when we're having company. Thanks for a fantastic recipe which is impressive but easy too.

Easy Shake and Bake Chicken

Fantastic. Just the kind of thing I like - simple and it tastes good. I liked the top reviewer's suggestion of leaving out the butter, but I did use a little bit of it rather than leave it out completely - about a tablespoon of butter and another of olive oil. Thanks for a quick, easy recipe where I can control the salt and know exactly what's in the coating.

Janet's Rich Banana Bread

BEST! I have a great banana bread recipe I've been using for years. This one beats it hands down. What I like best about it is the crispness of the crust. The only things I changed were to mash the banana (used 1 cup) rather than slice it and I used 1/4 cup of applesauce and 1/4 cup of butter (melted) to help keep down the calories and fat content. I thought I might want to add less sugar next time I make it but after tasting it 1 cup of sugar is perfect - at least for my taste.

Szechwan Shrimp

Wow! No wonder this is a top-rated recipe. Heat was perfect - enough for a bit of zing but not so much that you need a glass of water. The cooking odours were very strong but at least now that spring is coming we were able to open the windows. A very easy recipe that I'll use often. Many thanks!

Baked Scallops

One of the best scallop recipes I've seen. I used panko bread crumbs and used ocean scallops instead of bay since that's what I had on hand. Delicious, quick recipe that's impressive for guests. Thanks, John!

Red Pepper Soup

I made the recipe exactly as written except for substituting light cream for the heavy cream and using my immersion blender instead of transferring it to a blender (always makes me nervous to blend hot soup!). I've made it twice over the past few months. A definite keeper.

Asparagus Chicken Crepes

Fantastic. Loved everything about this recipe and will be making it often. I've made it twice so far - once with ham and once with just the chicken and asparagus - both are delicious. Many thanks for a great crepe recipe.
