Spinach and Feta Turkey Burgers

Delicious way to add a little extra to your turkey burgers! The only change that I made was to cook them on my Foreman grill instead of a regular grill, because I've found that turkey burgers don't hold together quite as well, and I was worried about them falling through the grates on my grill. Definitely will add to the recipe box!

Creamy Ham Turnovers

Wonderful recipe! I did make a few changes. I left out the onion (food allergy) and the celery, but added 1/2 pack of sliced mushrooms, torn, and 1c. shredded cheddar cheese. Everyone in my house loved these, and i get begged to make these every weekend!

Shrimp Po' Boys

These were fantastic! My other half swears that these tasted as much like the ones as he had in New Orleans as any he's had. And we love the sauce! We've carried it over to may other dishs. Prep takes a little time, and can be a little messy, but the result is worth it. The only changes I made were to how the bread was toasted. I softend butter and mixed in the garlic, buttered the split rolls, and toasted them on my griddle pan, instead of baking while i was frying the shrimp.

Portobello Mushroom Stroganoff

This was delicious. I did what another reviewer suggested and left the mushrooms in the broth while it was cooking down to add flavor. I was surpised by how quick and easy it was to make and how much flavor it had. I will definitely be making again!

Sausage-Stuffed Eggplant

We absolutely loved this one! I think this is our new favorite eggplant recipe. It was very easy to make, and tasted great. I used Bertolli's Vodka Sauce as the pasta sauce, and it didn't overpower at all. I misread the ingredients and used regular bulk sausage, not Italian, but it was still wonderful. The only issue we had was that the skin seemed to get a little tough. I didn't mind it, but hubby is going to just avoid it next time.

Fiery Pork Skewers

This had so much flavor, and was such a quick and easy fix. We were rained out of our cookout, so I sauteed with a little olive oil and serverd over rice. It made a fanatastic pan sauce that was perfect for the rice. I can't wait to try it on the grill, but I'll definitely keep this one in the recipe box!

Poached Fish with Cucumbers

I was afraid that the sauce would be overpowering on this one, but I was very wrong. The sauce was delicious, but we ended up liking it more on the plain pasta then we did on the fish. I'd never poached anything before, but it was amazingly easy.

Sweet and Savory Slow Cooker Pulled Pork

This was absolutely, hands down, amazing. It IS a lot of work, don't be surprised, but it was worth it. I followed each step exactly, with only two minor deviations. I prepared the shoulder the night before, by following steps 1,2,3,and half of 5. I put the shoulder in the crockpot in the fridge overnight, and mixed the liquid and poured over in the morning when I turned the crockpot on, and I set it to low, since I knew I would be out of the house for 12 hours. I made the mistake of discarding the fat/skin layer, I should have shreded it with the meat. That's the only thing I can think of that would have made this dish better! Not to sweet, which is what I was afraid of, and not vinegary, like most bbq recipes. I used Kraft Honey Hickory smoked BBQ sauce, and it was fantastic. The other half added more to his sandwiches, but I enjoyed it as is. It's a new family favorite.

Basil Shrimp

Delicious! I didn't have enough skewers, so I grilled what I could and pan sauteed the rest. I did use dried basil, only because my fresh had turned, but it still turned out wonderfully and had a great flavor. The recipe doesn't specify, but I used medium shrimp, and had WAY too many. Next time I will probably use Large or Jumbo shrimp. Thanks for a great meal!

Strawberry Cake from Scratch

Everyone who's trid this swear the cake tastes like strawberry ice cream. It was a little on the dense side, even after sifting the flour before measuring, but I was expecting it, and it still had a wonderful flavor. Made cream cheese icing to go with and it really set off the flavor.

Southern Dill Potato Salad

This is the best potato salad I've had in a long time. They sour cream perfectly cuts the mayo and the mustard isn't over powering. The only change that I'll probably make the next time I make this is to add dill into the spices and sour cream/mayo blend so there is more of a dill flavor to it (I like dill, it may be too much for others).

Dijon-Tarragon Cream Chicken

My only issue with this dish is that there wasn't enough of the sauce!!! My other half, who complains about having chicken once a week even loved this one. I used some pretty thick chicken breasts, and they released a lot of juice into the pan. I think that helped with some of the sauce issues that I saw in other reviews. I may add more chicken stock after I remove the chicken breasts from the skillet so that I can double the sauce, but I would definitely recommend adding some stock or broth if there isn't a lot of juice in the pan. I will definitely be making this over and over, it was delicious!

Tilapia Scaloppine

Very very tasty! Easy to make and quick to cook, a great weeknight meal! I made the recipe as stated, and other than the sauce not thickening, it came out perfectly. I'm going to experiment a bit to see if the issue with the sauce was on my end, but I'm sure I can get it thickened up one way or another the next time!

Cream Cheese Frosting II

I really enjoyed the strong cream cheese flavor in this one. It was so much better than the sickly sweet, over the top premade icing that you buy, and it tasted fresh. I didn't have the issues with runniness that some reviewers talked about, but the icing was not as firm as some others I've made when I was spreading it. I made it for a Strawberry cake, and will definitely use again.

Amazingly Easy Irish Soda Bread

This is a family favorite. I follow the directions exactly, no changes needed, but I always end up cooking for the max amount of time. I was so happy to finally find a recipe that didn't call for raisins. I end up having to make my brother his own loaf for his birthday every year, and it never seems to last him more than a couple of days. When I make at home, my husband and i seem to devour in two days as well, I love it with just butter, but he's asked me to include that this is amazing with peanut butter as well.

Seafood Creole

We loved this!!! It did take a while to make, but it was well worth it. I used all frozen seafood, thawed, since I can't get much fresh in my area, and per another suggestion, I added a large can of diced tomatoes (Basil, Oregono, and Garlic flavored). I did add 2 tbsp cornstarch+2 tbsp water to thicken it up at the end, and served with rice.
