Cheesy Vegetable Lasagna

This recipe was ok. I had to omit the onion and green pepper (food allergy), so it was a touch on the bland side. It could have used WAY more cheese, hardly a cheesy flavor at all. The spinich mixture turned out ok, but could have been a lot better with alfredo sauce. The veggies did alright, but they were still a little firm. Didn't seem like it heated all the way through in the oven, but cheese on top was almost burnt. Probably won't do again, but made an ok meal.

Joel's Guinness Steak

It was just ok. I cooked this for myself and 4 guys who love steak and guinness. Not sure what went wrong with it, but it just wasn't that tasty. Followed the recommened cooking times and the steaks were raw, not rare or medium, but raw. Tasted a lot of the steak sauce, and not much of anything else. Probably won't make this one again.

Pasta Fagioli Soup

The amount of pasta was great for us. I used the microwave, precooked bacon, but will probably fry my own next time. I also added about 1/2 lb. of ground beef. There were too many tomatoes in it for me, but everyone else loved it! I look forward to making this one for years to come!

Creamy Ham Turnovers

Wonderful recipe! I did make a few changes. I left out the onion (food allergy) and the celery, but added 1/2 pack of sliced mushrooms, torn, and 1c. shredded cheddar cheese. Everyone in my house loved these, and i get begged to make these every weekend!

Basil Tomato Soup

Very tasty, easy to make soup! I don't like tomato soup that much, but thought I would give this a try with grilled cheese on a cold night. I was quite pleased! The only change I made was to use 10 Basil leaves, instead of 18, because some folks in my household aren't tomato-basil fans... But this was a hit with all!

One-Dish Chicken, Vegetable and Rice Bake

Not great.... The veggies came out very mushy, the chicken wouldn't finish cooking and the whole thing had to bake for 30-45min more (and the pieces in the center still were't really done). I was disappointed, the whole thing smelled so good! With some tweaking, I might be able to make it work, but if you're looking for something to make tonight, find something else.

Slow Cooker Venison Stroganoff Meal

This is one of our favorite recipes to use up all the little odds and ends bits that you get with butchering at home. I usually double everything but the noodles, so we eat a couple of meals off of it. No other changes needed! It was a bit peppery, we weren't prepared for that the first time, but we've come to love it spicy. I have tried to make this on high for two hours, and don't recommend it. Make it on a day where you have the time to start it early and just let it cook. We use it for special occasions a lot, anniversary or Valentines Day, it's fancy enough to be a memorable meal but easy enough for a day where you just want something warming and filling!

Mama's Oh-So-Savory Lamb and Eggplant Casserole

Really enjoyed this one. Followed the recipe as closely as possible (I'm allergic to onion, so we used dried minced instead of fresh) and it was delicious! There are only a couple of small changes I would recommend. Next time, I'm going to stick with the 45 minute cook time, instead of an hour. The eggplant was very, very tender, but may have been a little too done for my taste. And add the rice the end of the recipe suggests. I did this as just the dish, and we had bread as a side, and ended up putting it on the bread instead of just dipping into the sauce. The spices give it a wonderful flavor, but you almost need a slightly bland background to it, or it can be a little overpowering. Thanks for the fantastic recipe though! This one's a keeper!

Sweet and Savory Slow Cooker Pulled Pork

This was absolutely, hands down, amazing. It IS a lot of work, don't be surprised, but it was worth it. I followed each step exactly, with only two minor deviations. I prepared the shoulder the night before, by following steps 1,2,3,and half of 5. I put the shoulder in the crockpot in the fridge overnight, and mixed the liquid and poured over in the morning when I turned the crockpot on, and I set it to low, since I knew I would be out of the house for 12 hours. I made the mistake of discarding the fat/skin layer, I should have shreded it with the meat. That's the only thing I can think of that would have made this dish better! Not to sweet, which is what I was afraid of, and not vinegary, like most bbq recipes. I used Kraft Honey Hickory smoked BBQ sauce, and it was fantastic. The other half added more to his sandwiches, but I enjoyed it as is. It's a new family favorite.

All-Day Apple Butter

I ended up only getting 7 half pint jars out of the recipe, and followed the canning time of another reviewer, leaving in a water bath for 30 min. I left 1/4" headspace, but may leave a litte more next time. Set it up to cook overnight, with a stir before bed and constant stiring in the morning and it was fantastic. Planning to use as xmas gifts all around, and hopefully will be using this one to make Pear Butter as well!

Broccoli Chicken Divan

I don't normally make changes to a recipe the first time I try it, but in this case I had to. Apparently my grocery doesn't carry cream of broccoli soup, so I used broccoli cheese soup in its place. I noticed a lot of reviews said thiw was bland,but I ddidn't think so. Its not like you're adding a ton of spices, but some nights you want something simple, with simple flavors. I followed all other instructions, and for the chicken I cubed 2 good sized boneless skinless breasts and quick cooked them in the skillet. The only change I would recommend other than trying it with broccoli cheese soup (and adding a little more cheese on top, because who doesn't love cheese?) is to use a a bigger dish. When I measured out the broccoli, I knew immediately that this wasn't going to fit in my 9 inch pie pan, so I grabbed a 2 quart round casserole dish, and it fit perfectly.

Savory Portobello Mushroom Burgers

This is my favorite go-to healthy recipe! I started making this last summer on the grill and moved it in to the broiler over the winter. Timing is all going to depend on your mushrooms, though. The thicker they are, the longer they take to cook, but that's a given. If you aren't keeping a close eye on them you can end up with charred mushrooms. I recommend going by the suggested times in the recipe and flipping again and cooking for 3 min per side, if they still aren't tender in the center.

Venison Chili

I make this every year, and save some for the freezer! I use ground venison instead of stew meat, and I highly recommend using Fetzer's Merlot as the wine (it will be the whole bottle, just dump). Make sure that you simmer it and allow it to reduce! It will thicken some, but it gets a much richer flavor than if you tried eating it with more of a soupy, watery consistancy (we've tried both). No other changes needed.

Best Brownies

Ok, I LOVED the brownies, I make them a couple of times each year. I have NEVER been able to get the frosting to come out right, and I've tried several times. I usually end up with chocolate play-doh.

Balsamic Roasted Pork Loin

This has become my staple when I need to add something that isn't chicken to my weekly menu. It does smell very vinegary when it's cooking, but has a much milder flavor. I followed the directions to the letter and wouldn't change a thing. I recommend Webber Grill's Steak Seasoning, we've had fantastic results with it. MAKE SURE YOU BASTE IT WHILE IT COOKS!

Chinese Roast Pork

A all day slow cooker pork roast as is. I usually use a shoulder roast, with or without the bone, depending on price and what I can find, and follow the directions exactly. Easy to throw together in the morning before you head out the door or the night before and let it marinate in the fridge over night.

Amazingly Easy Irish Soda Bread

This is a family favorite. I follow the directions exactly, no changes needed, but I always end up cooking for the max amount of time. I was so happy to finally find a recipe that didn't call for raisins. I end up having to make my brother his own loaf for his birthday every year, and it never seems to last him more than a couple of days. When I make at home, my husband and i seem to devour in two days as well, I love it with just butter, but he's asked me to include that this is amazing with peanut butter as well.

Turkey Marsala from Campbell's

I wanted to like this recipe so much, but it fell flat. I think the best way I can describe it, is that this is a "school cafeteria" version of a marsala. I loved the idea of using turkey breast cutlets, and will probably use them again, but this just wasn't what I was looking for. Trust me, take the time a make an actual marsala sauce, it will be worth it in theend. While this wasn't horrible, I definitely wont make again.

Mediterranean Chicken Orzo

This was pretty good. Made the recipe as written, except that i heated the chicken, tomato, basil and olives in a skillet. Then I added everything to the bowl with the lemon juice and olive oil, and mixed. We did add more Parm on top, but second helpings all around :) It can be a bit on the bland side, but for me, it's a good recipe to add to the box for a very quick dinner on a week that we may be eating out or having some richer dishes, to balance my menu.
