Grilled Cornish Game Hens

I'll start by saying I had to bake my birds, due to rain. I split them up the breast before putting them in the marinade, letting them sit overnight, and turning in the morning. They turned out fantastically. I cooked at 375, and basted at 15 min. intervals until done, about 1.5 hours. The birds had a great citrusy flavor all the way through without taking away from the flavor of the meat.

Southern Dill Potato Salad

This is the best potato salad I've had in a long time. They sour cream perfectly cuts the mayo and the mustard isn't over powering. The only change that I'll probably make the next time I make this is to add dill into the spices and sour cream/mayo blend so there is more of a dill flavor to it (I like dill, it may be too much for others).

Cajun Seafood Pasta

As written, this is a 3, and I wouldn't make again. BUT! I think I can improve it with a few small changes. Overall, it had a good flavor, we really enjoyed that part of it, but the aftertaste was so spicy it left a burn in your mouth for half an hour after. We had to eat this very slowly to give ourselves a break. This was after adding more cheese to try to cut the spicyness. Next time that I make this, I'm going to leave the spices the same, but cut all of the peppers in half. I really think that will cut back on a lot of the issues, and with the extra cheese I added (sorry, didn't measure, but about doubled what was called for).

Blue Cheese Coleslaw

I can't wait for the next cookout to be able to bring this with me! This was delicous, and a little different. I'm not much of a cole slaw fan, but I do like blue cheese coleslaw. The bacon and tomatoes really added to this. I used tomatoes from my garden, instead of the cherry tomatoes, but I don't think it made a difference. This is now a summer staple in my household!

Baked Fish and Rice

This was quick, easy and very filling, A tasty weeknight dinner. I did make a small change based on recommendations by another reviewer. I added a sprikle of seasoned salt, garlic powder, onion powder and dill when I added the paprika. It gave it just a little flavor boost. Will definitley be adding this to my recipe box!

Bourbon Pecan Chicken

I struggled with getting the chicken breasts fried. There didn't seem to be enough butter in the pan to fry both sides, and I had to reduce the number of breasts from 8 to 6. Again, there just wasn't enough room in the pan. I did like the flavor of the breading though, and will definitely keep working with it. The bourbon sauce was fantastic! I plan to make it again to put on oven roasted pork tenderloin and chicken breasts. Watch your mustard, though. It can quickly overpower the sauce if you have even a little bit over that quarter cup.

Smoky Grilled Pork Chops

I enjoyed the flavor, but may try baking them, as another reviewer suggested. I thought they were delicious, but my other half felt they were a little too spicy. Also, I used the measurements given, and followed the instructions listed and had NO trouble with the consistancy of the rub or any issues with it sticking to the chops.

Kofta Kebabs

Very flavorful, but almost too much so. I could barely taste the lamb in these. I will probably make again, but may cut back the spices just a bit. Quick and easy to make, with a side of Naan and Rice.

Grilled Turkey Legs

This had a great, spicy flavor to it, but I did have a little trouble once I moved it to the grill, and admittedly, it was mostly my fault. I left the onion out of the recipe (allergic), so when I transferred it to the grill, there was no barrier. My turkey legs were blackened in under 10 minutes, the honey just went up. I'm thinking that the next time I make these, I may add a couple drops of liquid smoke and do the final run under the broiler. If I do on the grill again, I'll either put on foil, or cook over indirect heat.

Marinated Wild Salmon

This wasn't bad, but I just don't know if the taste was for me. I felt like the marinade completely masked the taste of the salmon. It's not that it was bad, it was just very strong. I'm not sure if I would make again for that reason, but I'm keeping the recipe. I may make again with less marinade or less marinating time (I did overnight).

Garlic Ranch Chicken

This wasn't bad, I just didn't get much of the ranch flavor. I was really hoping that it would come through more. If I make this one again, I'll either leave to marinate overnight, or possibly rub with oil and a powedered ranch mix spice pack.

Pasta Primavera with Italian Turkey Sausage

This was really tasty. I'm not sure if I used veggies that were too large, but my skillet was full. I added everything into a bowl and mixed, because there just wasn't enough room. I did make a couple of small changes, I'm allergic to peppers, so I left out the green bell, and added a couple more Romas and mushrooms to balance. It was very filling and we'll be eating for lunches for the next week or so!

Sauceless Garden Lasagna

Delicious! I had reservations about using the no boil noodles, but it turned out perfectly. Everything was full of flavor, and we didn't even miss having a sauce. I did add more mozzerella than was called for, but I think it would have been just fine with the perscribed amount.

Pork Medallions with Balsamic Vinegar and Capers

This had such a great, strong flavor to it. I did have issues with the sauce not thickening quickly enough, but I'm not sure if it was me or the recipe. I guess we'll find out next time, because there will definitely be a next time!

Glazed Carrots and Brussels Sprouts

These weren't necessairly bad, but they weren't to my taste, and definitely not what I was expecting. While they are glazed, it was more of a savory glaze as opposed to a sweet glaze. I wasn't a fan but my husband loved. If I make this again, it will be in a small batch for him, and keep mine unglazed.

Classy Chicken

This was absolutely, hands down, fantastic. It wasn't difficult to make and had so much flavor you would have thought I'd spent much more time in the kitchen. I will admit, I did unintentinally screw up one ingredient. My grocery sells jars of sun dried tomatoes along with jar'd bruschetta. I thought I'd grabbed tomatoes, but no. Since I was at the add it to the pan stage, I just went ahead and added what I estimated to be able 5 chopped sun dried tomatoes worth of the bruschetta. Oh my goodness! I cannot imagine doing this dish with anything else now. Please try it, because believe me, you won't be disappointed!

Carrot Rice

This one is a solid 3 for me. It wasn't difficult to prepare, but it just had an OK flavor. I can't think of a dish this would go well with, other than plain chicken or pork, just to have a jazzier side dish. It wasn't bland, but for me, the flavors just didn't mesh well. I probably won't make again, but if I do, I might replace the water with Chicken Broth, just to give the rice a smoother background for the spices, carrots and nuts.

Beer Lime Grilled Chicken

This was more of a 3.5 for me. It smelled wonderful, but it just didn't seem to have much flavor to it. I left it marinating for 3-4 hours, but it still didn't seem to be enough. May make it again, may not, I'm not sure yet.
