Balsamic Roasted Carrots

I usually don't roast my carrots, I don't especially care for the sweetness it brings out. The balsamic perfectly cuts that and gives it a nice balance with a little twang. This is a new household favorite!

Artichoke Chicken

This was fantastic! Left it in the oven longer, took almost twice as long as suggested for the chicken to be done, but the artichoke mix had a wonderfully tasty and browned crust on top. Will definitly add to my recipe box!

Tilapia Scaloppine

Very very tasty! Easy to make and quick to cook, a great weeknight meal! I made the recipe as stated, and other than the sauce not thickening, it came out perfectly. I'm going to experiment a bit to see if the issue with the sauce was on my end, but I'm sure I can get it thickened up one way or another the next time!

Bourbon and Molasses-Glazed Turkey Breast

Wow doesn't cover it. This had such a fantastic flavor. I couldn't find the smaller breast at any of my local stores, so I went ahead and got an 8lb. breast. I didnt change the proportions of the marinade/glaze, but I lowered the oven to 325. I'm planning to try this on the grill with chicken this summer.

Basic Chicken Salad

This is my base recipe, and it's fabulous! I've tweaked it a little over time, but it's very good on it's own. I usually end up making a quadruple batch because it's so popular. I also add pecan chips, celery, and grapes for the crunch, and tarragon, and it's everyone's favorite!

Traci's Adobo Seasoning

I've never actually had or used Adobo seasoning, but had another recipe that called for it. I used this blend in it's place and it was very very tasty! I'm keeping a little bottle in my spice cabinet and plan to use it on chicken. Very similar to taco seasoning, as another reviewer said, but I could tell a little bit of a difference.

Mediterranean Pasta

Meh. I was hoping this would be so much better than it was, I'm a big fan of all the ingredientsl, but it just came out kind of bland. I may make it again, I may not, but there are plenty of other recipes out there that are very similar that seem to have a lot more flavor.

Absolutely wonderful. I will probably make again with thighs instead of legs and possibly with chicken breast. I marinated while i was at work, but may go overnight the next time. It picked up a lot of the flavor, but I wanted more! May make a gravy of it :)

Spicy Fisherman's Pie

This was delicious! We've had to give up Shepherd's Pie due to some allergy issues with the common ingredients, so this was a wonderful surprise. A word of warning though, don't over cook the potates, or it will turn into a soup/stew, and it may not need the full 40 min baking time. My oven usually cooks a little slower, so I just set the timer for 40 min and walked away, and didn't check it. That was totally my fault, but when I came back, the chese had browned, melted and sunk. Still amazingly tasty as a stew though :)

Ham and Cheese Crescent Roll-Ups

I actually really liked the idea of this recipe, and the recipe itself isn't bad, but the cheese leaked out of every single one that I made. All of the cheese, there was a little flavor left but not much. I've found similar recipes that didn't seem to have that issue, and I'll probably end up making one of them when I want something similar.

Angel Hair Shrimp Bake

More like 3.5 stars. It's good, don't get me wrong, but as others have stated, it needs a little work. I wasn't able to find the refrigerated angel hair pasta at any of the 3 grocery stores that I tried, so i used a 16oz box of angel hair, cooked. I thought the additional pasta would help offset some of the runniness that others reported, and it did help. I kept the salsa amount the same, but added a little more of each of the cheeses (my personal preference, I just eyeballed it) and 2 12oz bags of frozen shrimp. All in all, it worked out very well. They last step, the yougurt, egg and half &half mix didn't really sink down into the mix, though, it mostly settled on top, but ended up being like more of a cream/sour cream sauce on top. Still tasty and will probably make again, but it definitely needed some tweaking.

Soy Ginger Salmon

This is now a favorite in my house :) I kept the ingredients the same and followed suggestions by a few others. After marinating, I transfered the marinade to a small saucepan and added corstarch/water to thicken, heated, and used as a sauce. I pan fried the salmon, but I may try baking it (my usual method). The sauce can be a little strong, so I'd recommend using it sparingly at first until you get a feel for it. I do plan to add toasted sesame seeds on the next go round, I think they would be a wonderful addition.

Shrimp and Asparagus Casserole

This was amazingly rich and flavorful. I plan to serve over pasta the next time that I make it to cut down on some of the overly rich flavor. The only issue I had was with reheating. We had plenty leftover for lunch the next day (only 2 of us eating). However, when reheated, the aspargus seemed to take on a very mushy consistancy, and the sauce didn't seem quite right. I can't recommend the sauce on it's own nearly enough! I plan to make this with just the shrimp, too. Maybe fresh asparagus on the side?

Seafood Creole

We loved this!!! It did take a while to make, but it was well worth it. I used all frozen seafood, thawed, since I can't get much fresh in my area, and per another suggestion, I added a large can of diced tomatoes (Basil, Oregono, and Garlic flavored). I did add 2 tbsp cornstarch+2 tbsp water to thicken it up at the end, and served with rice.

Mediterranean Chicken Orzo

This was pretty good. Made the recipe as written, except that i heated the chicken, tomato, basil and olives in a skillet. Then I added everything to the bowl with the lemon juice and olive oil, and mixed. We did add more Parm on top, but second helpings all around :) It can be a bit on the bland side, but for me, it's a good recipe to add to the box for a very quick dinner on a week that we may be eating out or having some richer dishes, to balance my menu.

Turkey Marsala from Campbell's

I wanted to like this recipe so much, but it fell flat. I think the best way I can describe it, is that this is a "school cafeteria" version of a marsala. I loved the idea of using turkey breast cutlets, and will probably use them again, but this just wasn't what I was looking for. Trust me, take the time a make an actual marsala sauce, it will be worth it in theend. While this wasn't horrible, I definitely wont make again.

Amazingly Easy Irish Soda Bread

This is a family favorite. I follow the directions exactly, no changes needed, but I always end up cooking for the max amount of time. I was so happy to finally find a recipe that didn't call for raisins. I end up having to make my brother his own loaf for his birthday every year, and it never seems to last him more than a couple of days. When I make at home, my husband and i seem to devour in two days as well, I love it with just butter, but he's asked me to include that this is amazing with peanut butter as well.

Chinese Roast Pork

A all day slow cooker pork roast as is. I usually use a shoulder roast, with or without the bone, depending on price and what I can find, and follow the directions exactly. Easy to throw together in the morning before you head out the door or the night before and let it marinate in the fridge over night.

Balsamic Roasted Pork Loin

This has become my staple when I need to add something that isn't chicken to my weekly menu. It does smell very vinegary when it's cooking, but has a much milder flavor. I followed the directions to the letter and wouldn't change a thing. I recommend Webber Grill's Steak Seasoning, we've had fantastic results with it. MAKE SURE YOU BASTE IT WHILE IT COOKS!

Best Brownies

Ok, I LOVED the brownies, I make them a couple of times each year. I have NEVER been able to get the frosting to come out right, and I've tried several times. I usually end up with chocolate play-doh.
