Mint Ice Cubes

Reviewed: Jul. 13, 2010
These were neat. Hubby gave me that "Chick, you crazy?" look when I was making them, but he loved them in his lemonade! Score one for Skuba. :) Thanks!

Poor Man's Sandwich

Reviewed: Jul. 13, 2010
Hmm. The pickles and onions completely overpowered the peanut butter, and I couldn't even taste the mayonnaise. Sorry, but thanks for the interesting recipe! It makes for good conversation: "One time I tried this really weird sammich..." :)

Blueberry Buckle

Reviewed: Jul. 13, 2010
This was good. I didn't have shortening, so I subbed butter. The cook time is not long enough and the topping is too sweet. Next time I'll cook it without the topping, and I'll cook it five or ten minutes longer. But yes, there WILL be a next time!

Better Peanut Butter Sandwich

Reviewed: Jun. 17, 2010
This was good, but I prefer classic PB&J sandwiches. After reading other reviews, I mixed the applesauce with the peanut butter ahead of time, then took the extra precaution of lightly toasting the bread to keep the applesauce from making the bread soggy. After mixing with the peanut butter, it would've been fine on untoasted. I used honey wheat, which is sturdier than your average white bread. If you'd like a less sweet PB&J sandwich, this is definitely what you're looking for. Glad I tried it!

Banana Spring Rolls

Reviewed: Jun. 10, 2010
I wanted to give these three and a half stars, but four will suffice. These were pretty good--next time I'll use less brown sugar, for certain. They were way too sweet for me. But for simplicity and the fact that if I'd wanted, I could just make one or ten or two of these, I think they're phenomenal. I added some strawberries to the bowl and I prefered my bites to have strawberries in them, so next time I will add them in before cooking. These fry *really* fast, about five seconds is all they need in the fryer. I didn't realize how fast they'd cook, so I burned my first batch. I'm not sure if everyone's would brown that fast, so just keep an eye on them from the second you put them in. All in all, we enjoyed them. Thanks for the recipe.

Chicken Jerusalem II

Reviewed: Jun. 10, 2010
Sorry, nobody liked this. We found it much too salty, and the flavor was off. The only change I made was to leave out the artichoke hearts, because I forgot to get them while I was at the grocery. I'm wondering if it was something I did, because none of the ingredients are particularly salty (except the salt, obviously, but I omitted it), but I don't think I'll be trying it again. Thanks anyway.

Creamy Chicken and Wild Rice Soup

Reviewed: May 27, 2010
This is only loosely a review of this recipe since I changed so much. I basically took the concept of adding the heavy cream to a version of this I already make with veggies. The cream added to the experience though. Next time I have wild rice on hand I'll try it again and give a more accurate review. Thanks, Stephanie. :)

Italian Bread Bowls

Reviewed: May 27, 2010
I really want to give these three and a half stars, but I'll go with four. These made good loaves, but mine fell flat. I tried to be gentle when putting on the egg wash, but they flattened anyway. Next time I'll just put the wash on after the first fifteen minutes and skip the first wash. The taste of the bread was good, but not with soup. It would've made a nice dinner roll to go with barbeque or something. I filled mine with the creamy chicken and wild rice recipe found on this site.

Sloppy Joes II

Reviewed: May 26, 2010
I guess I'm used to the pouch mixes, because this seemed off. Not that it wasn't good, it just wasn't quite what I was expecting. Still, it was tasty and super easy. I've never used canned stuff because it's horrible. I cut back a teaspoon of the brown sugar because it seemed a little too much, but that was after doubling the recipe. Also, I eat mine on hotdog buns so they're not quite so sloppy, which is especially good when kids are involved. :) Thank you, Tamara.

Dreamy Nighttime Drink

Reviewed: May 23, 2010
I made some caramel sauce yesterday that was really good, so I added a half teaspoon of that, and I also added about half a teaspoon of spiced rum. I split this between my husband and me, and we both really loved it. Thanks very much, Essiemay.

Strawberries with Balsamic Vinegar

Reviewed: May 23, 2010
These were surprisingly delicious. The tanginess of the vinegar complements the fruit nicely. My strawberries were very sweet. Next time I get a batch of tart strawberries I will cut back on the vinegar just a touch. I didn't add the pepper this time, but will try it next time. Thanks!

Mandarin Orange Cake I

Reviewed: May 22, 2010
So this was pretty good, but I did drain the syrup that the oranges came in and subbed 1/3 cup orange juice to liven up the orange flavor. I also only used half of the 20 oz. can of pineapple, because I thought it would be too much. I was right--half the can was perfect for my tastes. This was SUPER moist! Everyone commented on how moist it was, and it may have been the most moist cake I've ever eaten. Thanks, Ellen.

Dessertlover's Classic Caramel Sauce

Reviewed: May 22, 2010
Very good. The only changes I made were to cook the sauce longer for both the first and second steps, and to add about a tablespoon of spiced rum along with the vanilla. I was freaking a little because my sugar wouldn't brown. It finally darkened a little after about 25 minutes, and I freaked some more because the sugar had created sugary crystal-looking things and I thought I'd messed up. But after I added the cream it dissolved again and turned out very smooth. It thickened up some after cooling, and I ate it with apples. Will make again and play with it a little.

So these were pretty tasty. I wound up putting my cookies back into the oven for a few minutes to get them to breaking consistency. They never browned, though.

Parmesan Baked Potatoes

Reviewed: May 11, 2010
These were okay. Everyone seemed to really enjoy them except for me. I thought they were a little bland, and the cheese didn't quite burn on the bottom, but it came very close to it. I'll try these one more time and move them up a rack in the oven.

Banoffee Pavlova

Reviewed: May 8, 2010
I'm sorry; I can't talk right now. I'm still dreaming about how delicious and beautiful this was . . . in all seriousness, though, this was amazing--everyone loved it. I made my own whipped cream because I hate Cool Whip, and I used milk chocolate because I prefer it. I also couldn't find superfine sugar, so I used regular granulated. Other than that, I followed the recipe exactly with no problems. Wonderful! Thank you!

Caramelized Baked Chicken

Reviewed: May 2, 2010
The glaze is actually really good, but not over chicken with skin on it--I don't like soggy skin. Next time I'll use it on boneless skinless breasts.
