Mediterranean Bean Salad

Thank you for this very easy to put together bean salad. I changed based on what I had on hand. I used white and black beans for the contrast and yellow cherry tomatoes cut in half and cilantro. I didn't have capers so I left that out. It seemed it was missing something and it may have been what the capers did for it so I added only a teaspoon of ACV and this is perfect. I will be buying capers next time.

Amazing Greek Pasta

I wanted to try this but I didn't have tomato sauce or Italian dices tomatoes, I used 1 can of diced regular tomatoes and 1 can of fire roasted tomatoes both not drained. I added some Italian seasoning and did the rest as stated in the recipe. I served it with whole wheat penne and I simmered Italian sweet sausage links in the sauce. It was great! Thank you so much for this recipe. I will be making this often!

Greek Garbanzo Bean Salad

I wasn't too sure about the recipe calling for cucumbers but it was great. I used kalmata olives, that's what I had on hand, and scaled back since they have a strong flavor. I did add more feta.

Butternut and Acorn Squash Soup

This will be my new addiction this winter. I just made this tonight and it was so good! I did add the optional cinnamon and I added olive oil and used only 1 tbsp butter. Also I used 4 cups of water with 4 chicken bullion cubes. It makes enough soup for an army. I loved this and would give it mores stars if I could. Thank you for sharing!

I loved how simple this was and didn't taste simple. I didn't use fatfree anything. If you don't use fatfree this is a pretty carb friendly dish.

Fried Cabbage II

I loved this, I ate almost the whole thing. I used a whole asian cabbage because that's what I had. I didn't add water because the cabbage was still damp after washing. I didn't add sugar because I just don't like to use it. I used all natural bacon. It's something that I will be eating more often. Thank you!

Sopapilla Cheesecake

very good! I would add just a little more butter though because it does crisp up a bit on top. Just want to add that this is not a dessert to try to make diet friendly, just enjoy every calorie! I use real butter also. I am making this for a co-workers birthday as requested again!

Egg Drop Soup I

My daughter said to give this 5 stars, even though she thinks it should be 10! She wanted egg drop soup and this had what I had on hand almost. No cornstarch so I used flour. I did 3 cubes and 3 cups of water. I never made it before and I was happy how EASY this is to make. No left overs, she ate the whole pan! So this is a keeper. Takes only a few minutes and doesn't mess up the kitchen. Thanks for sharing this.

Spruced Up Mashed Potatoes

This is the best recipe for anyone who won't eat thier vegetables. My husband won't touch cauliflower at all. It was just us two so I used 2 large potatoes and half a bag of frozen cauliflower with no carrots. My husband gobbled this up and got seconds. I still haven't told him! I couldn't detect the cauliflower at all but I used an electric mixer and beat it until smooth. Thank you so so so much for this. I will be making this one regularly!

Mexican Casserole

I had to improvise just a tad but kept the recipe the same, I doubled the recipe but not the chicken, I didn't have canned corn so I used a bag of frozen, didn't have have pkgd taco mix but used mexican seasoning, and then I didn't have salsa so I used canned tomatoes and onions and chopped some jalapeno's. I used corn tortillas on top with cheese at the end. I threw in some minute brown rice to make it more filling for my crowd. This made alot of food and there was not much left. This is a keeper for sure!

Cola Sauerkraut

This was the first time my DH got on here to find a recipe and he found this because we were looking for a side dish using sauerkraut. This was the best sauerkraut I've ever eaten. We were not too sure because of the coke but thought we would try it anyway since we had it all on hand. It is a keeper and will be put on weekly rotation! Thank you Thank you! Also to others not too sure, just try it.
