Ham and Chickpea Slow Cooker Soup

I had put a bag of dried chickpeas in the crockpot then decided to find a recipe for them.... I tried this one because I had left over ham which I threw in with half a cut up onion. I decided at the last minute to not use any of the vegetables listed. This is wonderful not all doctored up! The broth was salty enough with the ham. Can be a soup or a side.

Egg Drop Soup I

My daughter said to give this 5 stars, even though she thinks it should be 10! She wanted egg drop soup and this had what I had on hand almost. No cornstarch so I used flour. I did 3 cubes and 3 cups of water. I never made it before and I was happy how EASY this is to make. No left overs, she ate the whole pan! So this is a keeper. Takes only a few minutes and doesn't mess up the kitchen. Thanks for sharing this.

Spruced Up Mashed Potatoes

This is the best recipe for anyone who won't eat thier vegetables. My husband won't touch cauliflower at all. It was just us two so I used 2 large potatoes and half a bag of frozen cauliflower with no carrots. My husband gobbled this up and got seconds. I still haven't told him! I couldn't detect the cauliflower at all but I used an electric mixer and beat it until smooth. Thank you so so so much for this. I will be making this one regularly!

Amazing Greek Pasta

I wanted to try this but I didn't have tomato sauce or Italian dices tomatoes, I used 1 can of diced regular tomatoes and 1 can of fire roasted tomatoes both not drained. I added some Italian seasoning and did the rest as stated in the recipe. I served it with whole wheat penne and I simmered Italian sweet sausage links in the sauce. It was great! Thank you so much for this recipe. I will be making this often!

Butternut and Acorn Squash Soup

This will be my new addiction this winter. I just made this tonight and it was so good! I did add the optional cinnamon and I added olive oil and used only 1 tbsp butter. Also I used 4 cups of water with 4 chicken bullion cubes. It makes enough soup for an army. I loved this and would give it mores stars if I could. Thank you for sharing!

Smoked Salmon Frittata

I made this last night, it was wonderful. I only had frozen salmon but cooked it with the onions and it flaked apart perfectly. I didn't use olives because my daughter just didn't want them. I seasoned with the salt and pepper and a little dill. I also used a cast iron skillet. This is a keeper. Thank you very much for this recipe! This is perfect for anyone on atkins during Lent....

Mexican Casserole

I had to improvise just a tad but kept the recipe the same, I doubled the recipe but not the chicken, I didn't have canned corn so I used a bag of frozen, didn't have have pkgd taco mix but used mexican seasoning, and then I didn't have salsa so I used canned tomatoes and onions and chopped some jalapeno's. I used corn tortillas on top with cheese at the end. I threw in some minute brown rice to make it more filling for my crowd. This made alot of food and there was not much left. This is a keeper for sure!
