Salsafied Chicken and Rice

I tried it because of the simplicity. I do believe simple can be wonderful. This was ehh but easy. I needed a easy after work recipe that would use salsa I had in the fridge before it spoiled and instant rice as well that I had on hand. I already had frozen cooked chicken in the freezer. This wound up being a good starter recipe. It needed more liquid to cook through and it was bland. I added sour cream and all the extra "mexican" seasonings. After that it was pretty good. I made cornbread on the side as suggested. I think corn would have been a great add in. Also black beans would be too if eaten with tortilla chips. Thank you for submitting this!

French Bread

Tater Tot Bake

Very good easy go to recipe that everyone loves. My kiddos pig out on this. It's not healthy or gourmet but it's super easy and pure comfort food. I did the recipe as written. I double it and serve it with biscuits and a side vegetable to fill up hungry teenagers.

The Best Lemon Bars

The recipe is very easy to make. It is not clear as to how much lemon juice, 2 lemons can vary a lot. I used 2/3 cup lemon juice and a table spoon of zest, since I had the lemons there. Also the edges came out too done, so make sure to let your crust cool before you add the lemon layer. I'd give it 5 stars easy after that tweaking.

Oyster and Cornbread Dressing

I made this last year and never rated it, so now I am before Thanksgiving this year. I made this wanting to do a "traditional" dressing. I thought it would be great with all the reviews. I followed it exactly because this was new territory for me. It was not good. Nobody liked it and this year my mom already double checked that I wasn't going to make this again. If you plan on doing this for the holidays the make it ahead of time to see if you like it. DO NOT test it on Thanksgiving day!!! I will go back to my more basic cornbread dressing. Sorry....

Spicy Rapid Roast Chicken

It's fast and super easy prep. It tasted great when it came out but I used the drippings and ate the skin. The next day I took some leftover breast with a salad, it was tasteless without the skin. I actually chucked it and grabbed a couple tacos at the drive thru. It needs the butter and seasoning under the skin, just no way around it.

Smoked Salmon Frittata

I made this last night, it was wonderful. I only had frozen salmon but cooked it with the onions and it flaked apart perfectly. I didn't use olives because my daughter just didn't want them. I seasoned with the salt and pepper and a little dill. I also used a cast iron skillet. This is a keeper. Thank you very much for this recipe! This is perfect for anyone on atkins during Lent....

Ham and Chickpea Slow Cooker Soup

I had put a bag of dried chickpeas in the crockpot then decided to find a recipe for them.... I tried this one because I had left over ham which I threw in with half a cut up onion. I decided at the last minute to not use any of the vegetables listed. This is wonderful not all doctored up! The broth was salty enough with the ham. Can be a soup or a side.

Smothered Pork

Taste is 3 stars ease is 5 stars. I am glad to have something like this to go to after work and the family gets fast comfort food. Thank you. Anyone who is honestly expecting gormet out of a can of soup and a pork chop needs to get real.

These biscuits turned out flat. I was unimpressed. I won't use this again. My kids not finishing is not normal. The mix was too wet as far as I could tell.

Mexican Casserole

I had to improvise just a tad but kept the recipe the same, I doubled the recipe but not the chicken, I didn't have canned corn so I used a bag of frozen, didn't have have pkgd taco mix but used mexican seasoning, and then I didn't have salsa so I used canned tomatoes and onions and chopped some jalapeno's. I used corn tortillas on top with cheese at the end. I threw in some minute brown rice to make it more filling for my crowd. This made alot of food and there was not much left. This is a keeper for sure!

I try not to rate anything unless I tried it as written, I was tempted to add to this but I didn't. I gave it three stars because my crew likes boring bland food and there was no leftovers, I though it was awful.
