Almost Stuffed Peppers

This was good, but I found it to be a little bland. The only change I made was to add some minced garlic. I think I might try serving it with tomato sauce and shredded cheese on top. It is good though, and I'll make it again - kicking it up a little.

Chinese Cabbage Salad I

This is definitely a keeper! I was looking for something I could bring to a pot-luck on short notice with not much time to cook, and this was perfect! It was quick, easy and delicious. I didn't know what to do with the seasoning packet that came with the noodles, so I threw it away. I think next time, I'll follow the reviewer's idea of sprinkling it on the cashews and noodles as they toast. Anyway, thanks for this recipe!

Catherine's Spicy Chicken Soup

This was good, though I did modify it a little. I left out the salt and cut back on the bouillon (3 cubes) and chili powder (2 T). Also, I had some leftover chopped green bell pepper, so I threw that in. Next time I make it, I will go with all diced tomatoes. I agree with other reviewers - those whole tomatoes seem a little out of place. It's a good soup for a cold day! Thanks!

Heavenly Potatoes and Ham

This was fabulous! I made no changes except that I used white potatoes instead of red, and didn't bother to drizzle butter on top before baking. It is true that the full recipe wouldn't fit into my 13 x 9 pan, so I used a small roaster pan instead, and that worked out great. I'll certainly make this again!

Aunt Carol's Spinach and Fish Bake

I didn't exactly stick to the recipe, but I love the concept so much, I'm giving the 5 stars. Based on what I had on hand, I switched from cheddar to mozzerella and provolone cheeses, and used seasoned bread crumbs instead of plain. Also, I made a butter-crumb topping out of the reserved bread-crumbs. It was delicious! I used an 11 x 7 baking dish, but I think I would go for a smaller dish next time. Thanks for the recipe!

Chicken Spectacular

This was indeed spectacular! I made only two changes. I didn't have cream of celery soup, so I used cream of mushroom. Also, I thought the casserole looked a little plain on its way into the oven, so I put on a crumb/butter topping. It was fantasic and I'll make it often!

This was great! I was busy and didn't have alot of time to prepare something and this fit the bill. The flavor of the chicken soup with the beef was surprisingly nice. I made a mistake and bought a 28 oz. can of tomatoes and used it all because I thought the casserole might be dry otherwise. Also, to avoid hard noodles on the top, I baked the casserole covered for 45 minutes and uncovered for the last 15. It turned out great! Next time I make it, I think I'll mix the chicken soup in with the meat so it will be dispersed throughout the dish better, and I'll stick with the 28 oz. can of tomatoes.

Busy Day Chicken Rice Casserole

This is alot like my sister-in-law's recipe that I have made for years. Hers calls for a third can of soup, milk instead of water, and doesn't have the onion soup on top. It comes out a little saucier. I'll make this one again though, because I think it is a little healthier.

This was my first time making lasagna, and I did enjoy it! I will make the recipe again, but I think I will use ricotta cheese instead of the cottage cheese, and maybe a little less oregano (personal taste).

Chicken Salad

We loved this! I don't usually mess with recipes the first time I make them, but I was caught off guard when I found out that I didn't have any celery. I was looking around for something crunchy to add instead, and and I settled on unsalted peanuts of all things! I ended up throwing some raisins in there too. Anyway, it was delicious, but I promise I'll make the original recipe next time. :-)))

Asparagus, Chicken, and Pecan Pasta

Oh, I loved this! I found it very easy to make, and delicious. I used boiled chicken, omitted the salt and cut the cheese down to about 1 C, but other than that followed the recipe exactly. Actually, when I pulled out the leftovers to heat the next day, I tasted and decided that I like it even better chilled! That being the case, I will probably make it with that intent next time and substitute additional olive oil for the butter, to keep it from becoming sticky. Anyway, hot or cold, it is great!

Boilermaker Tailgate Chili

What a great recipe! I did vary it a little due to personal preference and availability of ingredients. I didn't use chili peppers or beer. For beans, I used two cans of red beans, one can of kidney beans, and one can of refried beans with chilies. I also halved the quantities of tabasco, cayenne and cumin. Even with all that alteration it still came out great! I got 12 good-sized servings out of it, and I'm eatin the leftovers for lunches this week. The only thing I'll do differently next time is to cut the celery a little smaller. It remained a little crunchy, and it is a little disconcerting to someone who isn't expecting it. ;-) Thanks for the recipe!

Fruited Curry Chicken Salad

I'll add another 5 stars to this! It happened to have ingredients I had on hand on a hot summer day, so I tried it, not expecting it to be as good as it was. I had dark raisins and walnuts, so I used them instead of the goldens and toasted pecans. Otherwise I followed the recipe exactly, and I LOVED it! Next time I make it, I'll probably increase the celery and decrease the onion (personal preference), and I'll make a point of trying the toasted pecans. Thanks for this recipe - it's going into my recipe box right now!

Marinated Cherry Tomato Salad

I love this recipe! I doubled it and brought it to a pot-luck lunch and it disappeared. I will make it again for sure. I think it might be nice to mix it as is with cooked pasta to make pasta salad that is a little different from the traditional mayonnaise version. Anyway, thanks for the great recipe!

These are awesome! They are easy to make and they taste SO GOOD!! I wouldn't change a thing on this recipe, but it might be fun to experiment with chocolate topping and peanutbutter chips sometime. Thanks for the recipe!

Swiss Chicken Casserole II

This gets 5 stars! It was just the thing to prepare on a busy day. I loved not having to precook the chicken, and the fact that there weren't a ton of ingredients to assemble. I used shredded Swiss cheese instead of the slices and cut it back to about 4 oz. Yummy!

Brooke's Best Bombshell Brownies

Oh my, these are good! I have done alot of baking, but surprisingly, have never made brownies before. I'm so glad I found this recipe! They were quite easy to make and absolutely decadent! I might try substituting peanutbutter chips for the chocolate chips, but otherwise, I wouldn't change a thing!

Company Casserole

This was terrific, and I wouldn't change a thing! I did substitute some additional cheddar cheese for the parmesan only because my guest doesn't like parmesan. Otherwise I followed the recipe exactly. I agree with other reviewers though, that it would be just as good with plain brown or white rice. Just for a change of pace, I might try it with peas instead of broccoli sometime. Thanks for the recipe!
