Banana Sour Cream Bread

Great recipe, both the family and friends truly enjoyed this banana bread.  Update:  I halved the recipe and made about 11 jumbo muffins.  It took about 25-30 minutes to cook.  Update 2: If halving the recipe use 2 eggs and 4 bananas.  At half the recipe it will make 12 regular size muffins and 6 jumbo muffins.  The regular muffins cooked in 28 minutes and the jumbo muffins cooked in 30 minutes.  I would start checking the muffins about 3 minutes before the time I have listed here.  Update 3: I halved the recipe, it made 3 regular size muffins and one 9x5 loaf.  The muffins cooked in 20 minutes and the loaf cooked in about 1hour and 10-15 minutes. Also, I didn't throughly read the recipe and I did not cream the sugar with the butter. Instead I mixed the butter in with the bananas and the other liquid ingredients.

World's Best Lasagna

Really good recipe; however, I did make a few minor alterations. Specifically, as recommended by others, I decreased the amount of salt used in the preparation. Instead of adding the whole tablespoon of salt, I only added 1/4-1/2 teaspoons. Also, I only used half of the amount of fennel seeds required. And lastly, I used slightly less water as specified in the recipe. I will definitely be making this recipe in the future. Update: I use 1.25 pounds of sweet Italian sausage and 4 tablespoons of sugar. Update 2: I made this with ground beef instead of ground beef and italian sausage. I found that it needed 1 and 1/2 tsp of salt and 6 tablespoons of sugar. Update 3: I used 1/2 cup or so of shredded carrots, 2 finely chopped celery stalks, 1 pound of ground chuck, 1 pound of italian sausage, 1/2 tablespoons of salt, 1/2 teaspoon of fennel, 4 tablespoons of sugar and 1/3 cup of water.

Blueberry Cream Muffins

This is a very nice, basic recipe. The muffins were good but I think the box mix would have been just as good. If you have leftover blueberries then this recipe may be for you. (Others, suggested that these do not compare to box muffins; according to these individuals, these muffins are substantially better.) Just a note of advice, if choose to make jumbo muffins your cooking time will increase to about 30 minutes. Update: Adding 1/3 cup of sugar makes this a 5 star recipe.

Boilermaker Tailgate Chili

I would definitely recommend this recipe to others; I felt that the flavors were good and absolutely memorable. I did, however, alter to the amount of spice due to the fact it was being served to a variety of different individuals with discerning palates. Specifically, I used 1 Pablano pepper in replace of the 2 chili peppers and I left out the hot pepper sauce. I left out the hot pepper sauce because it could be added at a later time by those consuming the chili. I also added 1 can of tomato paste (2 cans in total) to the recipe; I thought the consistency was a little loose without the additional paste. Because of the added acidity from the additional tomato paste I also added a few more teaspoons of sugar. Even though I am not a chili fan, I will keep this recipe in my arsenal to use at a later date! Update 2: I used a 12oz of tomato paste, 28 oz of diced tomatoes, 28 oz of petite diced tomatoes, 3 tablespoons of chili powder, 2 green chili, 2 red chili, no beer, 2 cans of mild beans, 1 can of zesty chili beans, 2 teaspoons of sugar, 4 chicken bullion cubes and the rest of the ingredients were the same. I let it simmer for 2.5 hours, put it in the fridge overnight and the next day and then served it. The flavors mellowed but it was really good.

Downeast Maine Pumpkin Bread

Great flavor and texture.  I made 6 jumbo muffins, the recipe was halved, and they came out just as I expected.  (Total cooking time was 36 minutes: the last 2 minutes were baked with the oven off.) Update:  I'm in a new location and the my oven is better calibrated; total cooking time: 28 minutes but start checking at 25 minutes.  I also made mini-muffins at they only took about 12 minutes to cook.  Finally, when I made the jumbo sized muffins I always had trouble with the muffin cooking fully.  The peak was always a little undercooked UNTIL I changed how much batter I put in each muffin cup.  I now put one ice cream size scoop and about 3/4 ice cream scoop in each muffin cup.  They come out perfectly now.  Update: I cut the recipe in half and baked it in a 9X5 loaf pan.  It cooked for approximately 48 minutes.  Yet another update:  I made regular size muffins tonight and they cooked for about 20 minutes.  With half of the recipe it made 12 regular size muffins and 8 or so mini-muffins or 15 regular muffins.

Chai Tea Mix

This is a pretty good recipe; my only suggestion would be to possibly decrease the amount of sugar. Update: This is probably a traditional chai tea recipe. I think I prefer the stuff from the retail chains.

Carrot Cake III

This is a good tasting cake; however, it is a little oily. I would recommend either decreasing the amount of oil to 1 cup or using applesauce. Update: I have made this cake quite a few times andX it always turns out great. If you should half the recipe, cook it in a 9X9 pan for 30 minutes. Also, if you cook the cake in a 9X13 pan, cook it for 40 minutes. Update 2: if using a jumbo muffin tin the cupcakes bake in 23 minutes. The full recipe makes 14 jumbo cupcakes. Update 3 (half recipe): Use 1/2 cup of oil and use 1.75 cups of shredded carrots. This makes 11 regular sized cupcakes which took approximately 20 minutes to bake. Update 3: Made a traditional cake with this recipe (full recipe). The cake baked for 25-30 minutes.

Sarah's Applesauce

It's probably fair to say that I prefer sweet applesauce and that's why I am only giving this rating four stars. I do think this is a great recipe for children because it isn't too sweet. UPDATE: I made this today and now I agree with the rest of the reviews, this is a 5 star recipe. My modifications were as follows: 5 medium-large granny smith apples, 1/2 cup sugar, a heaping 1/2 tsp. of cinnamon, and a dash of nutmeg. I also used a box grater to ensure all the apples were relatively the same size.

Sangria! Sangria!

I made this on two separate occassions over the summer and everyone loved it. I omitted the soft drink, it's a lot stronger without it. I also added apples to the mix. Update: I made this with Gallo Hearty Burgundy wine and because it's naturally sweet, sugar isn't necessary.

Soft Oatmeal Cookies

Good cookie. I add about 1 cup of dried cranberries. The next time I make these I probably decrease the flour to 1.75 cups of flour. If the cookies are flattened, the cooking time only needs to be about 7 minutes. Update: I now add 1/2 tsp of cloves (halved recipe) which it gives the cookie more flavor. I also use 1 full cup of raisins (halved recipe). I also use a regular ice cream scoop to make large cookies. I flatten the cookie and bake for 12-13 minutes.

Amish White Bread

This was my first time making bread and the flavor was really good. I liked the sweetness but it may not be for everyone. With that being said, if you're trying to make traditional white bread, you'll definitely need to decrease the amount of sugar.

Chicken Pot Pie IX

As is, the recipe only deserves 4 stars. With the following modifications, the recipe is a 5: cook the chicken in about 2 tablespoons of butter until almost done(season with salt and pepper), steam the carrots and celery until fork tender, and double the sauce.

Best Ever Pie Crust

This was my first attempt at making crust and it came out pretty well. I used all butter instead of shortening. The flavor was good but I think if I was to make it again with butter I would probably only use about 3/4 cup.

Caramel Popcorn

I have made this several times, sometimes I substitute margarine for butter, and it turns out great every time. (I do prefer this recipe with maragarine.) For those of you having trouble coating all the popcorn initially don't worry about it, it will evenly coat while it's in the oven.
