Really good recipe; however, I did make a few minor alterations. Specifically, as recommended by others, I decreased the amount of salt used in the preparation. Instead of adding the whole tablespoon of salt, I only added 1/4-1/2 teaspoons. Also, I only used half of the amount of fennel seeds required. And lastly, I used slightly less water as specified in the recipe. I will definitely be making this recipe in the future. Update: I use 1.25 pounds of sweet Italian sausage and 4 tablespoons of sugar. Update 2: I made this with ground beef instead of ground beef and italian sausage. I found that it needed 1 and 1/2 tsp of salt and 6 tablespoons of sugar. Update 3: I used 1/2 cup or so of shredded carrots, 2 finely chopped celery stalks, 1 pound of ground chuck, 1 pound of italian sausage, 1/2 tablespoons of salt, 1/2 teaspoon of fennel, 4 tablespoons of sugar and 1/3 cup of water.
