The Best Lemon Bars

I made these on a whim and realized too late into my preparation that I had no lemons, so I substituted with 5-1/2 Tablespoons of lemon juice and 1/2 teaspoon of lime juice. I also didn't have enough butter, so I used 1/2 c. margarine and 1/2 c. butter. In the end, these still turned out with delicious, buttery crust, and nice evenly sweet and tart topping, just like they should be! I have had bad luck with lemon bars in the past, so this time, I poured the lemon mixture onto the crust immediately after the crust was done, not letting the crust cool before returning it to the oven. I will definitely make these again, but with fresh fruit and all butter next time. Great recipe and so easy. Thank you for sharing!

Delicious Ham and Potato Soup

Tasty and quick to make; chop chop chop and it's nearly done. The only substitution I made was to use vegetable broth, since I didn't have any chicken broth handy at the time. I love this soup and can see adding other ingredients for a thicker, more "meal of a soup". This will be great for quick lunches at work or a fast dinner. Thank you for sharing your recipe.;

Cocoa Mocha Cheesecake

Although nothing beats the classic cheesecake, for anyone that suffers dairy allergies, it is nice to know there are alternatives that still taste great and that others can enjoy as well. I hope you like this too!

Cream Cheese Frosting II

Great recipe! After reading the ingredients, I doubled the recipe since it was for a 9"x9" 2 -layer cake and it worked well. The only change I made was to make my own powdered sugar from raw unrefined sugar in a food processor. If not for my poor frosting skills, I'm sure it would have looked nicer. A bonus was that I did have some left over frosting to use for graham cracker spread or for a small batch of cupcakes :). This was the perfect, NOT too sweet cream cheesy frosting recipe I was looking for. Thank you for sharing!

Quick Yeast Rolls

This is the best recipe I have ever used. I can never quite get rolls to work. Even my hubby has teased about the "door stops" I usually make; soft in the middle, if you can crack them open! I've used this recipe twice now and the second time, I made them larger for use as sandwich buns and they came out perfect, just like the first batch of dinner sized rolls. They were so yummy, both hubby and I just ate one plain hot out of the oven. Wonderful recipe ~ Thank you for sharing!
