Ricotta Fettuccine Alfredo with Broccoli

Reviewed: Mar. 11, 2012
Like other reviews, I tasted it as after adding the ingredients and found it to be bland. I added what I add on hand...garlic powder, paprika (which I like in creamed pasta and potato dishes) plus mozzarella cheese...cheddar or colby would have been better because it was stringy. I usually make my alfredo style sauce without a recipe, but I wanted to try this one because of the ricotta cheese. It really needs a lot more to flavor it.

Broccoli Quiche with Mashed Potato Crust

Reviewed: Feb. 10, 2012
It was good, but I prefer the standard quiche crust. Also, even though I followed the advice of others, and added an extra egg and flour, it still came out pretty soft. I also baked the crust on the bottom shelf, but I don't think it helped much. I give it stars though for taste. I added sausage and garlic powder and omitted the nutmeg.

Oven Roasted Red Potatoes

Reviewed: May 6, 2010
This is almost identical to the one on the Lipton Onion Soup box. I don't use the red potatoes even though that does sound good. I like to add two lipton onion packets for more flavor, and I increase the potatoes to about 12 med. to large ones.

Corn Dog Casserole

Reviewed: Mar. 18, 2010
I gave this a 4 because I am not a hot dog fan. I give it a 5 though for flavor. Like others I left out the celery and added 1/2 tsp. of dry mustard for more of a corn dog flavor. Next time I may try a tsp. instead. I noticed from the reviews some people leave out the sage. Personally my family loves the flavor the sage gives. It is quite a distinctive spice, and I think it goes well with this recipe. One thing that's important to mention..don't replace the milk with buttermilk...I tried that and it came out mushy.

Hash Brown and Egg Casserole

Reviewed: Sep. 15, 2009
I really love this dish. It wasn't dry for me, but I did make a few changes. I used Jimmy Dean sausage (4 patties)since that is what I had, 1 extra cup of cheddar cheese (divided)- my kids love extra cheese - and 1 extra egg. Maybe the cheese gave it extra moistness. Great for leftovers.

Apple Crumb Pie

Reviewed: Aug. 28, 2009
Very good! I am happy to see someone uses chopped apples instead of thinly sliced ones. It seems to be popular, but I find them slimy. I did follow the recipe and use white sugar, but the topping is very good with brown sugar too.

Fresh Tomato Salsa

Reviewed: Oct. 22, 2008
This is a very good basic salsa recipe, however I would be careful with the peppers, using only 1 and a 1/2 was enough for our family. Not everyone can handle 5 of them in a recipe.

Moist Turkey Burgers

Reviewed: Oct. 22, 2008
My husband and I really enjoyed these burgers, but our children thought they were boring. I didn't add the bread crumbs either, and they held up just fine. They are great with mustard.

Corn Dog Casserole

Reviewed: Sep. 9, 2008
I'm not much of a hot dog fan but this really good. I think the sage gives it a great flavor. I did make some changes though. I cut the hot dogs into smaller pieces and put 2 cups of cheese in it with a cup sprinkled over the top...kids love it that way. I put the cover on the last 5 minutes or so since I have had a problem with it getting too dark. By the way, the 15 ounce cornbread mix works fine with this recipe.

Peanut Butter Noodles

Reviewed: May 10, 2008
This recipe is excellent. I doubled it for a family of five and used 1/2 jarred chicken base, 1/2 my homemade chicken broth, ginger spice, and spaghetti noodles. I did not add the garlic or green onions, but I am sure it would be great with them.

Amusement Park Cornbread

Reviewed: Apr. 14, 2008
One of my best cornbread recipes..turns out great everytime. I like to make them as muffins. It took 12 minutes to bake them. I also decreased the amt. of flour and increased the cornmeal, otherwise they didn't have the 'cornbread' taste to them. I also use buttermilk as the liquid if I have it handy, but it's good with regular milk too.

Pizza Dough III

Reviewed: Apr. 12, 2008
Very good recipe..easy to make. I didn't have bread flour so I used regular, and it turned out fine. I also took the advice of some others and added 1/2 tsp. of garlic powder and 1/2 cup more flour....dough is way too sticky otherwise.

Lemon Square Bars

Reviewed: Oct. 4, 2007
Very good. However, the first time I made these the middle was too soft, needed to bake longer. It might have been my oven since we have had problems with it before. The second time I tried it, I increased the time an extra 20 minutes, and it came out great. If you do have this problem, make sure you keep an eyes on it so the top doesn't brown too much.

Teriyaki Chicken

I thought it needed something more so I though the pineapple juice and brown sugar idea would help minimize a strong soy flavor, but it didn't. It was just too much. I think it needs something else, but I am not sure what.
