Cranberry Chipotle Meatballs
Yummy! I love chipotle, so I couldn't wait to try these. However, I did make a few changes due since I didn't have all the ingrediants. I used two 32 oz. bags of swedish meatballs, a large can of chipotle, 1 can of jellied, 1 can had whole cranberries in it, and a small scoop of brown sugar. Unfortunately I didn't have any pineapple so I didn't use it. I also didn't have alot of time, so I microwaved the meatballs for a couple minutes and dumped everything into the crock pot. I tasted it before I added the sugar and thought it was a little sweet. I can't wait to try it with homemade meatballs! The sauce ingrediantes might be a nice glaze on a turkey or chicken. Rhubarb Lemonade
I opted to use concentrated lemon juice from the shelf instead of fresh. Perhaps frozen or fresh would make a better flavor, but I just couldn't get past that bottled lemon flavor. If you do not like the bottled "real lemon" shelf flavor then I'd suggest to try something else or skip the recipe. The rhubarb flavor was only slight. I also added another cup and a half when I made the recipe hoping it would stand out stronger. It was something different but, I'll pass as I could of had 2 desserts or so with the amount of rhubarb needed to make one gallon of lemonade.

BLT Pasta Salad
Yummy! and I don't like BLT sandwiches! I used Farfelle pasta, original Ranch, cherry tomatoes cut in 1/2 lengthwise, (the smaller tomatoes I left whole), onion, and will add fresh pieces of Romaine and bacon right before serving. This was VERY simple to make. I am wondering what a little bit of shredded cheddar would do to this? (I love cheese!) Almost added green peppers, etc. but changed my mind. Thanks for the great recipe!
