Whole Grain Healthy Banana Bread

I'm always looking for healthy recipes so when I came across this one, I was psyched. But the product was just ok. The amount of flax seed added to this recipe made the bread somewhat sticky/chewy. I'd cut back on the flax seed and sub in more whole wheat flour.

Elegant Orzo with Wilted Spinach and Pine Nuts

Not the best recipe. I don't know why but something was off... the combo of the ingredients just didn't work for me or my husband. Thankfully, a friend or mine recently shared a simpler and tastier orzo recipe... orzo, chopped sundried tomatoes, toasted pine nuts, feta cheese, and basil (all added in portions you prefer... I always add a lot of nuts). Don't worry about oil and salt as the tomatoes provide plenty. I also add fresh cracked black pepper. Trust me, it's great!!!

Banana Banana Bread

Great recipe! I didn't have enough bananas so subbed apple sauce. Bread came out very moist and still had strong banana flavor. I also used whole wheat flour and no one could tell the difference. Will definitely be making this over and over again!

Cavatelli and Broccoli

I agree with the other reviewers about the lack of flavor and the need for salt. I've modified this recipe by using chicken broth instead. I also heavily season the broth with fresh garlic, crushed red pepper, and black pepper. Then I blanch the broccoli (I've also used broccoli rabe; it adds a whole new depth of flavor) in the broth, followed by cooking the cavatelli in the same broth... this seems to flavor each component nicely.

Artichoke & Spinach Dip Restaurant Style

Amazing dip!!! I added a little more garlic than the recipe calls for and 2 tbsp of pickled jalapeños for spice. I'll be making this dip for years to come.

Spicy Bean Salsa

This salsa was a hit. I served it with some flax seed multigrain chips (which are great because they are a thicker chip and can handle the weight of the salsa). I did modify it slightly. I omitted the italian dressing and instead used fresh lime, salt/pepper, cilantro, garlic, and jalapenos for flavor.

Garlic Chicken

Cheesy Polenta

Good basic recipe. I've modified it by adding 2 cloves garlic as well as crushed red pepper flakes. I've also tried both parmesan and cheddar cheeses... parmesan wins, hands down.

Tiramisu Layer Cake

I love this recipe. Not only is it easy (and yummy!!!), but it is very versatile. I have customized it on numerous occassions depending on the croud I was serving (I've decreased the kahlua, I've decreased the coffee, I have even decreased the amount of icing). No matter who you are serving, this recipe can work for you!!

Guacamole

A decent recipe. It's very similar to a guacamole recipe I make, however I don't use cayenne pepper. Instead, I add diced marinated jalapenos. These tend to add the right amount of spice as well as the tanginess (because of the vinegar).
