Mango Lassi I
I used to work for an Indian resturant. They used mango pulp. Using the pulp is the trick to not making this like a juice drink. You can buy pulp at any Indian grocery store. Some people even say using the mango itself ruins the drink.

Mango Lassi II
I had the great fortune to go to Mexico, where me and my Dad visited a Mango farm. That part of Mexico happened to be called Nayarit. When I went back home to the US, I was amazed to find a Mango in the grocery store that had a label on it that said from Nayarit! Pretty cool I think. The secret to making a good Lassi is to use the Mango pulp, the mango itself has too much fiber and acid, which can give it an orange juice type of taste and texture.

Restaurant Style Mango Lassi
Yes, don't make the mistake of using the magno itself. I think it's the acid in the mango juice that ruins the recipe. You have to use the mango pulp. I used to deliver for an Indian restaurant and they added a touch of rose essence oil to it. I don't remember them making it with yogurt though. But, I could be wrong on that.
