Mango, Corn, and Black Bean Salsa

Wonderful!! Didn't think I could make salsa but this is quick, easy & delicious! I increased fresh cilantro to ½ cup & added ¼ cup candied jalapeños & 1 whole diced fresh jalapeño. I also heated up the juice in a can of diced tomatoes & thickened it with a teaspoon of corn starch & a tablespoon of brown sugar & the juice in the jar of candied jalapeños which gave it some sweet kick. Yum!!!

Lentil Soup

Great Soup! I'll add 1 cup lentils next time to make it more soup than side dish. I added Sweet Red Curry Paste 2 oz jar, along with doubling the spices, and adding Curry Powder 1 tsp, which gave it an exotic flavor. Yum!

Wonderful Banana Cake

5IVE Star YUM!! Rich banana flavor. Mashed 3 small bananas up with (Mistake!) baking powder instead of baking soda: cake still rose-just not as well- & flavor remained rich. Whipped up two 6 oz pkgs banana pudding with 1 cup milk & entire giant tub of Cool Whip to frost the cake. Garnished with banana & strawberry slices & a squirt of Reddi Whip. This light yet satisfying dessert got gobbled up quickly. I'll make it again this week, its now a major favorite. Thanks for a super recipe.

Cranberry Gelatin Salad

Crazy Great Gello Salad!! Reviewer are right: people who do Not like cranberry jello loove this salad!! Tip: used a large package of Raspberry Jello dissolved into warm cherry juice from canned cherries, adding water to make 2 cups. I used whole berry cranberry sauce as my family enjoys the fruit texture. However non-family members who are also smooth-cranberry-jello lovers slurped this up!! I also oven-roasted a cup of pecans a few minutes to crisp them up before cooling & adding to the salad. I then poured this into two separate 4-cup decorative molds (sprayed with PAM first to ease removal). After refrigerating overnight, this delicious gelatin salad unmolds onto a bed of greens looking like a magazine photo shoot!! Drizzled some sweet coleslaw dressing over all, sprinkled with a few more roasted pecans and plopped a dollop of whipped cream on top. Wowee Kazowie!! It was Gone in 30 minutes!! Thank you for a fabulous recipe!!

Glazed Meatloaf I

Hey! This incredible meatloaf was my Nonnie's recipe!! or maybe my Nonnie was actually useing this recipe... . .What Ev!! This is my family's favorite meatloaf recipe ever! Its the all time best comfort food with leftovers for cold weather, hot weather; We'd all rather eat This Meatloaf!! Thanks!

Roast Leg of Lamb with Rosemary

Family looved this Recipe! Picky eaters gobbled it up!! Tip: Placed this boneless lamb on a rack in a covered roaster after marinating it for 48 hours (not on purpose but great result!). Roasted at 325 degrees for 2 hours. This roasting time yielded a tasty, tender, pink roast lamb! Served with green mint jelly and red current jelly, twice baked potatos and Cranberry Gelatin (from All Recipes). Fabulous meal! Fabulous marinade! Thanks for a great recipe!

Maple Roast Turkey and Gravy

All-Day Apple Butter

Awesome Recipe! Used brown sugar, more nutmeg (because we really like nutmeg!), another teaspoon of cinnamon and allspice. I also left the lid off longer for extra thick, rich apple butter. Yum! Family loooves it!! Try it over Vanilla Bean ice cream. Yum!

Melt-In-Your-Mouth Meat Loaf

Mmmm delicious!! Time constraints made oven roasting feasible for me, and I also mixed 1/3 ground pork with the beef, added minced fresh onions, 2 tsp Lawry's Seasoned Salt, 1 tsp Italian seasoning, 2 tsp garlic seasoning, an extra dash of Thyme (The Secret Ingredient!!). Without commercial breadcrumbs I toasted some leftover slices of rye bread in the pre-heating oven and crushed them to make my own bread crumbs. But Wow!! What a Crowd Pleaser!! Moist and mmmm good!! I think it would be too greasy in the crockpot, even without the ground pork. But thanks for a great recipe!!
