Wisconsin Five-Cheese Bake

After reading the reviews I knew I had to do some tweaking. What I did not know is that these tweaks would put this recipe out of the ballpark! First, I used more cheese than called for. Maybe 2 cups or more. I doubled the amount of sour cream. I used Barilla penne pasta. I dissolved 3 chicken bouillon cubes in about 2 tablespoons of water in the microwave and added them to the half and half/whole milk mixture (1 cup). I used about 2 TBSP each of Italian seasoning and crushed red pepper flakes. I didn't have ricotta, so used about 2 cups of cottage cheese and 1 egg, beat slightly. I also reserved about 1 cup of cheeses mixed with about 1/2 C of plain breadcrumbs. Lastly, I used ground black pepper and minced garlic. I baked it 15-20 min, then broiled for 5 min.

Golden Yam Brownies

These are wonderful. I made some changes, however slight, I need to tell about them.. I used 3 teaspoons of vanilla.. (I always add more vanilla than called for) and I didn't measure the yams. I just grated one good sized one and used it all. It's really moist and yummy. I also used less than one cup each of the brown and white sugars. I figured with the icing it would be sweet enough.. I was right! This is one way to get some good beta carotine in your kids and they won't object.

Baked Teriyaki Chicken

I don't know what made me try this recipe because I've never liked teriaki sauce you buy in the jars. This is fantastic and such a great recipe I've shared it with my friends who like to cook and think it would be great on pork, too.

Brownie Biscotti

These were delicious and a big hit. I made the recipe several times during the holidays. Each time the logs crumbled, but I managed to get some really nice diagnoal slices to add to the cookie tins I was preparing to give as gifts. The crumbs, I saved for myself, since I loved them so much. I drizzled melted chocolate and white icing over them and dusted them with confectioner's sugar. Very nice gift with a tin of flavored coffee in a basket with some latté mugs. If anyone knows the trick to slicing these without them breaking, please pass it on, as this was the only flaw I saw in this recipe.
