Pasta Carbonara

Used 1/4 c butter, 1/2 bar of the reduced fat cream cheese, used 6 strips of turkey bacon, 1/4 c Parmesan cheese and 1% milk. Serve with Tyson chicken strips. Sauce makes 9 - 1 1/4 c servings at 104 calories. Chicken is 100 cal per strip = 204 + noodles. Very yummy! Hubby said it was restaurant quality. My 5 yo and 8 yo both loved it! Yay!

Eggplant Pizzas

I soaked the eggplant for 10 minutes in salt water (a trick I use when cooking eggplant parmesan) and still found it to be a little bland. This turned out to be an okay substitute for eggplant parmesan. I really like the little "pizza" presentation, though.

Mango Corn Salsa

Used this to top the Marinated Tuna Steak recipe on this site. It was great! I used one whole serrano pepper and removed the ribs and seeds on the other two and was plenty hot for us. Might reduce the cilantro in 1/2 next time.

Lasagna Alfredo

Very yummy! My changes: I sprinkled the chicken with garlic powder, onion powder, salt and pepper and then sauteed in a pan. I substituted one bottle of alfredo sauce with 1 small bottle of Rao's marinara sauce, which I drizzled over the spinach mixture and on the top noodle layer. I used 1/2 whole wheat noodles and alternated between white and wheat when laying down the noodles. I also used 1 pint whole milk ricotta and 3/4 of a small container of reduced fat cottage cheese. I added a sprinkle of Italian seasoning to the ricotta mix / cottage cheese / spinach mixture and whisked in an egg. This was so good and a little less indulgent. I don't believe I used even 3 cups of moz. cheese. This is definitely going into the "rotation"!

Sweet Potato Pie I

Never tasted sweet potato pie before. This was exceptional. If you are burned out on pumpkin this is a great substitute. In fact this may replace our pumpkin pie next Thanksgiving. Very earthy and smooth!

Swedish Nuts II

Marinated Wild Salmon

The best salmon ever! We grilled ours on cedar paper that we found at the grocery store. The fish was just the right amount of spicy and the cooking time was right on. I will serve this to all my guests. Oh, be sure to use wild salmon- tastes much better.

Blackened Tuna Steaks with Mango Salsa

Excellent! The spices are just right- not too hot and definitely not bland. The mango salsa is really good too! Will be making this again. I cooked my tuna to 140 degrees, which is considered overcooked by most but was perfect for me. Still a light pink in the very center but mostly gray.

Marinated Tuna Steak

Made this with the Mango Corn Salsa on this site. It was delish! Seared on a pan for 6 minutes per side, flipping every 2 minutes. I cooked my husband's and kids' pieces until done all the way through. They all loved it- which is a HUGE deal at our dinner table! Will make this again and again!

Spicy Chicken and Sweet Potato Stew

Wheat Crackers

Very good but I did modified it to cut back on calories (which is really nothing like the original). I guess at this point, I'm just using the cooking method. Here's what I used...4 TBS flaxseeds, 1/4 c toasted wheat bran, 1 c whole wheat flour, 2 TBS olive oil, 1 c water. I've made it both with salt and without and I prefer it without salt. I scooped half onto a silicon mat, covered it with wax paper and rolled it out as thin as I could. Line a baking sheet with parchment paper. Remove the wax paper and flip the silicon mat over onto the parchment paper. Then you can peel away the silicon mat and the dough is left intact. Then I scored it with a pizza cutter.
