Wheat Crackers

Very good but I did modified it to cut back on calories (which is really nothing like the original). I guess at this point, I'm just using the cooking method. Here's what I used...4 TBS flaxseeds, 1/4 c toasted wheat bran, 1 c whole wheat flour, 2 TBS olive oil, 1 c water. I've made it both with salt and without and I prefer it without salt. I scooped half onto a silicon mat, covered it with wax paper and rolled it out as thin as I could. Line a baking sheet with parchment paper. Remove the wax paper and flip the silicon mat over onto the parchment paper. Then you can peel away the silicon mat and the dough is left intact. Then I scored it with a pizza cutter.

Spicy Chicken Thai Soup

I've never had Thai food before but gave this a try. Very good. I added 4Tbs of the red curry paste and it had a nice heat in the back of my throat. Not too much, though. I agree with others that said it would be nice with rice or noodles. I will cook some bulgar or spinach noodles to add to the soup for dinner. I also added a few slices of tomato to my bowl before eating (and to save on calories I used 1 can lite coconut milk).

Southern Candied Sweet Potatoes

Halved the sugar and butter and cooked it all in a cast iron skillet. I added a handful of pecans. It was delish!

Hawaiian Chicken Kabobs

Used rice vinegar instead of sherry. Cut up 4 chicken breasts into chunky strips and marinated with canned pineapple chunks and seasonings for about an hour. Discarded the pineapples and used a pan grill to cook the chicken. Boiled and simmered the remaining marinade while cooking the chicken. Pan grilled bell peppers and onion. Served with white rice. Delish!

My family and I thought this was just okay. It was not smooth and creamy like I hoped. It had a nice flavor but maybe we just don't like a lot of sour cream.

Rich Chocolate Frosting

Pasta Carbonara

Used 1/4 c butter, 1/2 bar of the reduced fat cream cheese, used 6 strips of turkey bacon, 1/4 c Parmesan cheese and 1% milk. Serve with Tyson chicken strips. Sauce makes 9 - 1 1/4 c servings at 104 calories. Chicken is 100 cal per strip = 204 + noodles. Very yummy! Hubby said it was restaurant quality. My 5 yo and 8 yo both loved it! Yay!

Restaurant Style Beef and Broccoli

I think the oyster sauce I used wasn't so great. The taste was just a little off in my opinion. Next time I will try a different brand of oyster sauce. The broccoli was great but the meat (sirloin cut) just didn't have the right flavor for me. (Hubby liked his chicken version, though).

Potato Salmon Patties

I used 2 green onions, sub. the canned salmon with baked fresh salmon (seasoned with salt, pepper and lemon juice), and baked them at 350 for 40 minutes in a muffin pan. They were awesome! Will be making regularly.

Blackened Tuna Steaks with Mango Salsa

Excellent! The spices are just right- not too hot and definitely not bland. The mango salsa is really good too! Will be making this again. I cooked my tuna to 140 degrees, which is considered overcooked by most but was perfect for me. Still a light pink in the very center but mostly gray.

Eggplant Pizzas

I soaked the eggplant for 10 minutes in salt water (a trick I use when cooking eggplant parmesan) and still found it to be a little bland. This turned out to be an okay substitute for eggplant parmesan. I really like the little "pizza" presentation, though.

Awesome Slow Cooker Pot Roast

This was my first attempt at a pot roast! I'm not really sure how this compares to other recipes as I'm not a big meat eater. But I thought it was pretty tasty. It seemed to be more of a beef stew than a pot roast. I only used 1 can of mushroom soup and I don't think the consistency of the gravy suffered. Although, it may have been more savory with both cans. I cooked about 4 pounds of a tri-tip roast on high for 5 hours and thought it would be more tender if it had a few more hours to cook. I put potatoes and carrots on the bottom of the crock pot and those came out nicely. My five year old didn't like it, my 8 year old gave the potatoes a 75, the meat a 70 and the carrots a 90. LOL!

Favorite Old Fashioned Gingerbread

As far as taste, I didn't care for this. But if you take my personal preference out of the equation I would rate this recipe a success. I added 1/2 c applesauce and doubled the spices like others mentioned. The cake was very moist and had a great texture and color. Turns out I'm just not a fan of gingerbread "bread"- but I do love the cookies! Go figure!
