Best Chocolate Chip Cookies

I have made a lot of cookies over the years. This is the best recipe even though it does not look very different at first. Our family did a blind taste test and this one won hands down. I will never go back. Here are a few pointers to keep them from spreading- more chips is not better- it thins the dough too much so the cookies spread as there is nothing to hold on to, round the dough in large balls and chill over night, then bake on chilled cookie sheets. Re-chill cookie sheets in between batches, place in middle rack, one pan at a time. Use sil pats. DO not OVERBAKE! Use a timer- chilled dough balls take about 11.5 minutes, pull when you think they need a few more seconds to get rid of the wet dough look in the center of the cookie- they will continue to cook, trust me. You want them to be pale as they will brown a bit while they cool.

Colcannon Irish Potatoes

This was delicious. I used the water that corned beef is packed in to boilnthe vegies and it came out superb. I also used low fat yogurt spread instead of butter to keep it healthier. It was an instant hit.

Split Pea Soup

I made this using chicken broth for water and turkey ham to keep the fat content down. I also served it with hot sauce on the side for those who like a little kick. It was delicious, my family ate the entire batch! This is a real keeper.

Ukrainian Red Borscht Soup

I followed the recipe but added aged vinegar instead of sugar and used dill instead of parsley as someone suggested. This is a real winner and one I will make again and again! In addition, it is low in fat and high in fiber! This really works with my lifestyle and freezes well too.

Easy and Delicious Chicken and Rice Casserole

The chicken was dry, and the rice took a long time to cook- I ended up adding water twice to have enough liquid. I would not make it again. It was edible, but not memorable.

If you grease the cookie sheets the cookeis spread out too far, though they do remain chewy. I would not make this recipe again, there are far better recipes.

Pumpkin Soup

This recipe is awful...it tasted like dishwater- bland, soapy, and flavorless. I tried to spice it up with extra seasonings and curry as someone suggested, but after awhile I just gave up and threw it down the drain.

Curried Zucchini Soup

The soup really suffers from lack of a flavorful base. I added a couple T. of tomato paste and then a dollop of non fat sour cream in each bowl to jazz it up. I also didn't add as much olive oil since it didn't make a difference the second time I made this. I like extra curry and a pinch of cumin too.
