About this Cook
I am a single parent and I find cooking meals to be a great way to spend time at home, relax, and enjoy my time off of work with my toddler. She is special needs with eating/sensory issues so much of my meal choices these days cater to what I think she might eat and is healthy. She is a big fan of red sauce, pasta, quesadillas, and pizza. So the recipes I try often are variations of these themes. I also like to bake because nothing beats a home made dessert, and people love you when you bring sugar or chocolate over.
My favorite things to cook
I love to chop veggies. I find it theraputic. Also anything with chocolate.
My favorite family cooking traditions
Being a young parent I am working on creating my own traditions with my daughter, like making special breakfasts on holidays, and finding recipes to make my "own." But I also cook a lot of my mom's recipes for casual dinners. I grew up in a household in which we sat together every evening for dinner, and I still crave some of those dishes from time to time.
My cooking triumphs
Ahhhh, my puffy apple pancake rises 3 inches! I will post the recipe sometime.
My cooking tragedies
Too numerous to mention! That is why I try to find proven recipes that I know are good, that way I can't screw them up too badly.

Creamy Blueberry Pie
Excellent pie, I used store bought crust and for the topping took the advice of others and used 1/4 brown sugar, 1/4 cup white sugar, and a pinch of cinnamon. Since I don't have a pastry blender for the topping, just mixed it together with my hands for a nice crumble. SO EASY AND SO GOOD.
