Kheer (Rice Pudding)

I thought that the liquid to rice ratio was too much so I took another reviews advice and used only 1.5 cups each. This made the mixture too thick. Do not use less milk, it really needs the full amount. I also added a pinch of saffron which I soaked in about an ounce of milk first. This was a nice addition. Overall, the recipe was okay but nothing to die for.

Raspberry Almond Coffeecake

This cake was very delicious. Unfortunately I did not read the other reviews first and didn't double the batter but it was still delicious. The cake did not cover the raspberries but it still cooked up well. I am excited next time I see raspberries to make this again but will more dough.

Cinnamon Ice Cream

This ice cream tastes good but was not what I was looking for. Some ice cream parlors around San Diego have cinnamon ice cream which I was trying to make but his recipe was WAY too creamy for my liking. The flavor was great but texture was too thick and creamy. I will not make again.

Mexican Whole Wheat Flour Tortillas

I only tried this recipe once but did not like how the tortillas came out. I did add 3 tsps baking powder as I have seen on other recipes and I substituted butter for the shortening as I don't use shortening. I should have read the other reviews about olive oil. I think I will try it again with olive oil and more white flour than whole wheat. I did let them stand 8 hours but my dough was really dry from the beginning even after adding 1/4 cup boiling water extra. I cooked them on an iron skillet as I have read elsewhere. So I'm not sure where I went wrong but don't use my modifications/mistakes.

Avocado, Tomato and Mango Salsa

This is by far the best salsa I have ever made. I doubled the recipe and still amongst about 10 people it was gone in a half hour. I am so excited to make it again this weekend for 2 parties. After buying the ingredients, I don't want to wait, I want to make it and eat it all now!

Peach Ice Cream

This ice cream is amazing. I made quite a few changes suggested by other reviews. I halved the recipe which was still too much for my ice cream maker. Next time I would do a third of the recipe/change the calculations to 11 servings. I used one mango and the rest peaches. I used a potato masher in a glass measuring bowl to make it easier and a little chunkier. I also changed the milk quantities to make it not so creamy. I used 1 cup whole milk, 1 cup heavy cream, and 1 cup half and half. Next time I will do as another reviewer suggested 2 cups half & half and 1 cup cream. I also cut down the sugar a little to 1.5 cups. I will definitely make this again.

Alfredo Mostaccioli

This recipe was very quick and easy. I used whole wheat penne pasta for a healthier choice, which was so good, nobody even knew that it wasn't regular pasta. Also I added about two cups crushed fresh tomatoes. We have too many tomatoes growing in the garden so I peeled them and crushed them with a potato masher in a pyrex measuring cup. Since there was more content, I did add salt and garlic powder to taste. I definitely will be making this again. For me it made two dinner servings the first night and I had leftovers for lunch three times also.

Chicken Salad with Bacon, Lettuce and Tomato

I ommitted the bacon because it is just not healthy and necessary. Also I couldn't find any worchestershire sauce in the house so ommitted that. I added 1 finely chopped jalapeno because I like spicy foods and capsicum the spicy chemical helps burn calories. This was really delicious and filling. I served it for 4 guests and they all loved it.

Vanilla Ice Cream V

Next time I will substitute whole milk for the heavy cream for a lighter version because as it melted, it looked like pure cream. I scaled it to 12 to fit in my machine and it called for 1/2 cup plus 1 tablespoon sugar. I substituted 2 tablespoons honey for that 1 tablespoon sugar. I love the honey flavor and it was just really excellent. It was SO good that I couldn't stop myself from eating it out of the top of the machine as it was freezing!

Peaches and Cream Cookies

These cookies were quite good. I ate half of the first batch! I added a teaspoon of vanilla since others said they were lacking in flavor which was a nice touch. I looked at the cookies as they were baking and thought they were too flat so I added flour before the next batch. BAD idea. The cookies have a very cake like fun texture that I hadn't had in so long and really love but adding flour makes them too much work to eat! Too chewy. Its hard to tell when these cookies are done and they kind of take a while. I baked them at 350 and still they took 15 minutes. Next time I will add maybe a half cup more nuts. I definitely recomend this recipe for using up peaches as my tree this year is overproducing and I know the feeling of needing stuff to do with all of the fruit!

Chicken Bow Tie Salad

This recipe was seriously lacking in flavor. I used a seeded and chopped fresh jalapeno instead of canned green chile. I used parsley instead of cilantro. Also I used whole wheat penne. These modifications I made because of what I had on hand. Perhaps it would have been better if I followed the recipe exactly. Everybody who ate this at my home had to seriously salt it and add hot sauce. I will not make this again.

Grilled Orange Vinaigrette Chicken Salad

This recipe was excellent. The only modification that I did was use 2 pounds of chicken - 4 breasts, since my fiance thinks salad isn't a meal unless it has a lot of chicken. Everybody loved this recipe. Nobody complained about gritiness of the dressing. I used Mrs. Dashes original blend for the garlic herb seasoning. Next time I will add another can of oranges.
