I have always been a baker since I started making cookies and cakes when I was 14 years old. But I had to cut back on so many cookies, cakes and breads because they're a little too calorific for me to be eating all the time. Since I am engaged, I have begun to learn how to cook real food. My fiance is from Mexico and very macho so I will be doing all of the cooking and am therefore trying all sorts of new recipes. I am learning from his family as well. I would recomend listening to my recipes for more authentic Mexican food as many of the recipes that I have found on here are not Mexican in my opinion, being 5 miles from the U.S./Mexican border.

Grilled Orange Vinaigrette Chicken Salad
This recipe was excellent. The only modification that I did was use 2 pounds of chicken - 4 breasts, since my fiance thinks salad isn't a meal unless it has a lot of chicken. Everybody loved this recipe. Nobody complained about gritiness of the dressing. I used Mrs. Dashes original blend for the garlic herb seasoning. Next time I will add another can of oranges.

Peaches and Cream Cookies
These cookies were quite good. I ate half of the first batch! I added a teaspoon of vanilla since others said they were lacking in flavor which was a nice touch. I looked at the cookies as they were baking and thought they were too flat so I added flour before the next batch. BAD idea. The cookies have a very cake like fun texture that I hadn't had in so long and really love but adding flour makes them too much work to eat! Too chewy. Its hard to tell when these cookies are done and they kind of take a while. I baked them at 350 and still they took 15 minutes. Next time I will add maybe a half cup more nuts. I definitely recomend this recipe for using up peaches as my tree this year is overproducing and I know the feeling of needing stuff to do with all of the fruit!

Vanilla Ice Cream V
Next time I will substitute whole milk for the heavy cream for a lighter version because as it melted, it looked like pure cream. I scaled it to 12 to fit in my machine and it called for 1/2 cup plus 1 tablespoon sugar. I substituted 2 tablespoons honey for that 1 tablespoon sugar. I love the honey flavor and it was just really excellent. It was SO good that I couldn't stop myself from eating it out of the top of the machine as it was freezing!
