Beth's Spicy Oatmeal Raisin Cookies

Delicious! I followed another reviewer's suggestion and added a packet of vanilla instant pudding to the mix. I've never done that before and WOW were they good!! So moist and chewy, we ate them in no time!

Easy Beer Bread Mix

This was delicious! I didn't use the italian seasoning, but I did add about 1/4 cup of shredded parmesan & asiago cheese. Yum! A perfect, EASY bread.

Pumpkin-Apple Muffins with Streusel Topping

I made mine oil-free, substituting a mixture of apple sauce and apple butter--so moist and delicious! Also threw some cinnamon chips into the streusel topping, was a nice touch and they turned out more desserty than breakfast-y.

Quick and Easy Green Chile Chicken Enchilada Casserole

Instead of baking the chicken, I coated them in: 2 TBSP Lemon Juice, 2 TBSP Olive Oil, and 1/2 a packet of Taco seasoning. Then, I grilled them.. I thought the baked chicken would be too plain, and this mexican grilled version was delicious. To shred, I put them in the food processor. Yum!

Chocolate Cherry Cake III

I got rave reviews last week for this cake. I followed the recipe, but jazzed it up a bit for presentation. First off, instead of 9x13, I used two round 9" pans. I used the cherries from another can of pie filling (minus all the goo) between layers, then poured the icing all over the finished product. One tip: try to pour evenly and avoid smoothing the icing with a spatula--it takes away from the shiny finish. When the icing was dry and I was ready to serve, I dusted the entire cake with a mixture of cocoa powder & powdered sugar (combine 1 part powdered sugar with 3 parts cocoa powder for a bittersweet dust). It was gorgeous, moist, and everyone gobbled it up.

Mexican Lasagna

This was surprisingly delicious!! Of course I made some alterations--I always do, but I think it would've been great without any changes. First of all, I used a packet of taco seasoning instead of the spices for the taco meat. It's just easier and a lot more flavorful. Secondly, I used a large can of red enchilada sauce mixed with the salsa to make a larger amount of red sauce. I then used this as a layer in addition to the noodles and beef/beans, so that the flavor permeated throughout. I poured the remaining on top before the cheese. Lastly, I topped the finished baked product with chopped tomatoes, in addition to the black olives and green onions. It really was beautiful!

Grilled Lemon Herb Pork Chops

We grill pork chops ALL the time--and although we always have these ingredients on hand, I've never come up with this combination of flavors to make such a delicious marinade. I LOVE it when I find recipes that use ingredients I already have to dress up something I make all the time. A keeper for sure!

The Whole Jar of Peanut Butter Cookies

This was delicious- I followed the recipe, (but used crunchy peanut butter in addition to the added peanuts) and it was great--took them to work and everyone loved them. A little crumbly, but still nice and soft. On a few of them, I sprinkled some mini chocolate chips before baking (I love chocolate but my husband doesn't) and they were great!

Cheddar Baked Chicken

We really liked this. I didn't have Rice Crispies, so I subbed in Cheddar French Fried Onions, it was delicious. Also, added about a tablespoon of sour cream to milk/egg mix. Delicious.

Hot Artichoke Spinach Dip

I also substituted cream cheese for the heavy cream, and added 1/2 jar of alfredo sauce, as suggested by one reviewer. The result was perfect, it tasted JUST like the artichoke dip at the chain restaurant!

Judy's Strawberry Pretzel Salad

This turned out well, and was definitely popular at my recent cookout. However, next time I make it, I am reducing the butter to one stick, and the sugar to 3/4 cup. The pretzel layer was so buttery and sugary, it was overpowering. My fiance said it tasted like cotton candy it was so sweet!

Amish Macaroni Salad

I also reduced the sugar to about 1/3 cup, and it was plenty sweet. I used farfalle pasta which I thought looked very nice. I really liked this recipe, it is not bland, which is usually my complaint about creamy salads. This is definitely going to be my go-to recipe for Macaroni Salad.

Double Layer Chocolate Peanut Butter Pie

This is a very delicious, extremely decadent dessert! I followed a reviewer's suggestion by using 1 cup milk, 1 cup heavy cream, and also prepared it the day before. The result was perfect. I also used more Reeses on the top, and the pie looked like it belonged in a restaurant's display cooler.

Tangy Pineapple Chicken

I added mushrooms, assorted bell peppers, and onions to this. I also added about 1/3 cup of teriyaki sauce. It turned into more of a sweet and sour chicken, but it was great! I did not want to make it as described it seemed a little bland otherwise.

Anthony's Chicken

I had my doubts about this recipe - barbeque sauce and pasta? But actually, it was really tasty. I did not use too much mustard, because I didn't want the overly-mustardy taste everyone was complaining about. Anyhow, it was really good and had a nice tangy spicy flavor. It took a bit more time than expected, but the result was worth it. I'll definitely make it again.

Potato and Broccoli Casserole

I followed everyone's advice, and boiled these potatoes until almost cooked before baking the casserole. It took about 45 minutes to get bubbly after that. I wasn't sure what size to cut the potatoes, but if I make this again I will cut them into small cubes, instead of large ones like I did. I also used stuffing mix as the crumb topping and that was tasty! Overall, not a very exciting recipe, but it tasted good, and my vegetarian mom enjoyed it as her entree.

San Antonio Chicken Roll Ups

These were delicious, but not easy to make! The rolling process sounded easy, but my cheese crumbled and was hard to keep in. The bacon helped a little, but still hard to wrap tightly. I lost most of my cheese during the grilling. That said, it was delicious and I'll try it again, next time I'll cut the skewers in half and use a softer cheese.

Best Hot Crab Dip

This dip is aptly named! It is truly the best crab dip I've ever had or made. While it may not be preferred by people who prefer a more simple dip, the artichokes and capers make this absolutely delicious!

BLT Dip

I made this yesterday and it was a crowd pleaser. However, why don't more BLT dip recipes have the "L"? I know lettuce gets soggy, but i chopped a cup of iceberg and sprinkled it on top of the dip right before serving - it was eaten too quickly to allow it to get soggy! And also, I added the tomatoes along with the bacon (rather than waiting to add right before serving) and it didn't cause any problems - only allowed the flavors to meld together even better. All in all, great recipe!
