Old-Fashioned Vanilla Pudding

Reviewed: Mar. 8, 2009
I used the microwave method described by BARBSRX and it was spot on. I also used only 1 egg yolk and a little less butter, but used a good quality double-strength vanilla. I don't know how this could taste any better or be any easier to make. Just make sure to use a whip instead of just stirring. This was so good I couldn't wait for it to cool before I attacked it. Okay...now I'm going to go hide my bathroom scales...

Simple Turkey Chili

Reviewed: Nov. 9, 2008
I made a few changes and have lost track of how many times I've made this recipe - it's the only chili recipe I use anymore. I use one can vegetarian refried beans instead of mashed beans and add a can each of kidney and pinto beans. One cup of water is plenty and I use smoked paprika and petite diced tomatoes instead of crushed. This is really good stuff. Great with cornbread.

Basic Corn Muffins

Reviewed: Oct. 15, 2006
This recipe is so understated that it would be easy to pass it by - a big mistake! I used a little less sugar and the end result was a perfectly balanced cornbread. Not too sweet, not too cakey. Made 6 mini-loaves instead of muffins, and they were moist after heating in the microwave three days later. This is a very quick to make recipe.

Pizza Crust for Bread Machine

Reviewed: Feb. 15, 2006
Great pizza dough! Chewy on the inside, crunchy on the outside. I'm going to try using this dough for breadsticks. I lightly oiled the pizza pan with olive oil and sprinkled it with cornmeal, and baked it for 20 minutes @ 425 degrees. This is good stuff.

Seven Grain Bread II

Reviewed: Jan. 21, 2006
This recipe made way too much dough to bake in my 2 lb bread machine. I used the dough to make 18 good size rolls, and placed them fairly close together on a cookie sheet to rise so they would be "soft sided". They turned out great! The cereal lends a nice crunch to the finished product, but the bread is still nice and light. This seems to be a very versatile recipe and next time I may actually make it into an loaf.

Wheat Bread with Flax Seed

Reviewed: Jan. 18, 2006
I ended up adding extra flour, but expected that due to the previous reviews. This bread is wonderful. I've been trying different recipes with lots of fiber, and this is my favorite. It's light, nutty, and makes great toast. I'll be using this for sandwiches since the honey isn't overpowering in the taste. This is going to be a hard recipe to beat!!

Flax and Sunflower Seed Bread

Reviewed: Jan. 9, 2006
I used olive oil as suggested and baked the bread in the oven after the bread machine did all the work. This is one of those "it's hard to believe this is good for you because it tastes so good" foods. A beautiful, tender, high rising loaf that beats any store bought whole grain bread.

Spiced Applesauce Bread

Reviewed: Jan. 8, 2006
This was a BIG hit at my house. The texture is almost custardy it is so moist, and the spices really blend well. My picky sweetie asked what the name of the bread was after his second piece (a good sign) and after his third piece he said he wished he wasn't so full because he wanted to just keep on eating the bread!! That's as good as it gets.

Dr. Michael's Yeasted Cornbread

Reviewed: May 8, 2005
I've been making this for several years now and love this recipe. It is best when warm, and I always make it to go with my 13 bean soup. It's light and the corn flavor is not overpowering, very subtle. As others have mentioned, it makes nice toast the next day. Very fine grained, high rising - has never failed.

Whole Wheat Honey Bread

Reviewed: May 8, 2005
Great recipe! I used the suggested changes of adding gluten and half molasses for the sweetener and tweaked it a little of my own -substituted white whole wheat flour from King Arthur and used two tablespoons of vegetable oil for the shortening. Baked in a 9x5" pan at 375 degrees for 35 minutes. This is the best 100% whole wheat bread I've ever tasted!! Light and has great texture. Next time (and there will be many more next times) I may add oatmeal and make rolls. This is yummy stuff.

Potato Leek Soup II

Reviewed: Oct. 5, 2004
Wonderful flavor. Used a scallion/onion mixture to get a little garlic flavor. Although the texture is a little grainy because of the potato flakes, this is would be very adaptable to home dried potatoes or even left over mashed potatoes. Excellent for a lower fat version of a great comfort food.

Just the right amount of sweetness. Used the King Arthur pie filling enhancer instead of flour. This disappeared in no time!

Soft, Moist and Gooey Cinnamon Buns

Wonderful recipe. Used a 9x13 pan and made 12 large rolls. (Using dental floss to cut dough works great.) Gave this recipe to all my bread baking friends and everyone loves it.
