Ricotta Bread

Very nice bread with my bread maker., started to put tablespoon or two of Ricotta cheese in other bread recipes for added flavour.

Excellent bread, only change I did was to put coconut into a coffee grinder to make into powdered coconut and then dry roasted in a pan to bring out its nutty character. Kids love it but be aware the bread make alot of 'crumbs' (from the powdered coconut I think)

Pumpkin Yeast Bread

Really Good, kids said they would not eat pumpkin bread, but when they tried it. they loved it. I followed recipe for my bread machine ecept scaled it up to 16 servings (2 pound loaf), and use fresh milk for water & powder, and butter for margarine. Great aroma reminiscent of hot cross buns.

Slow Cooker Ham

Good taste & very tender. Very, very easy recipe. I followed recipe exactly but during cooking I inserted a knife into ham and basted inside and out with the crock pot juices.

Caramel Sauce

This is how I make "Dulce De Leche" (after cooking I sprinkle in some Vanilla and Brandy). If in a rush I use one of other reviewers suggestion but putting the cans in a pressure cooker covers with water and cook up to 45 minute. If not in a rush, I use another reviewers suggestion and use a crock pot/slow cooker on high and cook for 3-3.5 hours (an hour less if you use boiling water), no need to worry about water running dry. You can put the very hot cans in a cold water bath to hasten cooling. Super easy & super good either way.

Scalloped Potatoes II

Do not change anything to this recipe as it is an excellent recipe if you want the simple taste of Potatoes, butter and salt. If it is to bland for you or your families palette then there are many other good scalloped potatoes recipes where cheese, onions ect have a dominant flavour. Perfect simple side dish that doesn’t overpower your meat or vegetables! The only variations I would experiment with would be the type of potatoes and /or the type of salt.

Key Lime Cheesecake I

Very Good. Have made it twice, first time to use up a bag of extra Key Limes and the second time because it was delicious and had Lime Juice on hand. Second time was as good (maybe better) and I did not have to squeeze all those tiny Limes. Use commercial lime juice, as good plus a whole lot easier.

Naan

Wife loves it and much less expensive than store bought Naan. We use it to dip in homemade Daal. I use my bread machine and follow the directons except I put hte Egg ( I do not pre Beat) and butter( I do not melt it) with the liquids. Nice and rich.

Chicken Enchiladas II

Really good but I made a mistake and added all the cooked chicken to the sauce and was stuck as to what to do. As we love the Burrito Pie Recipe I decided as it is too hard to take the chicken out we should make it into a "Chicken Enchilada Pie". As I said it was excellent and a little bit easier to make as I used 5 layers of flat bread with sauce in-between and toped of with cheese, Baked at 350 for 15- 20 Minutes. I would like to try this recipe properly but my mistake was delicious, and knows I can have two options for dinner: Burrito and/or Enchilada Pie.

Chewy Butterscotch Graham Cookies

I was looking for a recipe to use up some extra graham cracker crumbs and found this and thought about trying it even though I had only Chocolate chips. I doubled the recipe (to use up the graham cracker crumbs), substituted the chocolate chips & immediately seperated & froze the cookie dough. I dough is quite stiff when frozen and need to be defrosted before dropping onto a pan. The cookies have turned out quite moist and chewy, with a very strong Graham cracker flavour. It is a nice variation to chocolate chip cookies but is not for those who do not have may not like the flavour of Graham Crackers.

Health Dynamics Rye Bread

Tried the recipes in my bread machine but was very sceptical that it would work. When it was finished it was only half way up the side of the pan and figured that my first assumption was right and that this was another loaf for relegated as fit only for making breadcrumbs. But when I had sliced the loaf to make crumbs the texture was similar to other store bought 100% rye bread, and it surprisingly turned out to a very tasty loaf, particularly toasted. I will make it again as that my wife prefers to eat gluten free and this loaf is tasty and economical.

Cream Cheese Frosting I

So easy and yet it is so good, a nice base that you can make probably make many variations. I added some Vanilla the first time I made it. I imagine any extract would work just as well or you can add some cocoa for a chocolate flavour.

Salmon Cakes I

I found this recipe to be very good. I live in an area where pacific salmon is very prevelant and I needed a recipe that would use up the leftovers from my catch of salmon. This was great. My family and I are not the greatest salmon fanciers and enjoyed how this recipe did not have an overpowering taste of salmon. If you like but dont love salmon this is a good recipe, mind you when frying the patties, they absorb a tremedous amount of oil. Make sure you pan is hot.

Hawaiian Bread I

Very moist, rich bread. Substituted Coconut cream for milk and extract and used the sweet bread setting on bread machine. More complex than some recipes but this is a keeper.

Pear Pie I

This was a great pie, I used Anjou pears and substitute brown sugar for the white. Great way to use up some extras pears as well as a excellent change from apple pie.
