Sloppy Joes II

Great recipe for Sloppy Joe's, would defiantly use again, would have given a 5 stars but it needs more sauce and you have to add water or it will be dry. Hated other canned Sloppy Joe's, love this one.

Cake Mix Cookies VIII

Used Duncan Hines, Devil's food Chocolate, with a small/medium ice cream scoop. Did not have to flatten, before baking, like others. At first, I accidentally used 2 sticks of butter for one recipe, thankfully I had another box of cake mix. I was wondering why the first batch was so buttery. LOL I did use 2 Tbls of oil and 1 teaspoon of vanilla, per suggestion. Also used powder sugar on half of the cookies for a crinkle look, per another reviewer. Definitely add the chocolate chips. Good cookies. Would make again.

Grandmother's Buttermilk Cornbread

Very good Cornbread, I have made this many times. I have added a can of corn or fresh cooked corn (chopped in food processor). I have used this recipe and modified the sugar, depending what I am making, if I want it sweet (as written) or reducing sugar to 1/3 or 1/2 cup. Always comes out great. Thanks!

Big Soft Ginger Cookies

This was the best ginger cookie I have ever had! My husband does not even like ginger cookies but he loved these. This recipe will be staple in my cookie recipes from now on. The best thing about this recipe, no need adjust the ingredients. A must is to refrigerate until the dough is firm, before rolling. Cookies remained Soft and Chewy. Thanks so much Amy, for sharing this recipe.

German Apple Pancake

This recipe was very good! If you like custard and apples this recipe is a must try. Anyone who is looking for a recipe similar to Walker Brothers Rest., this is NOT the same, but very good. Another reviewer recommend the recipe from Cooks, but this one is far Better!!!! I followed suggestion of using 2-3 apples(which is a must) and used 1 1/4 tsp of cinnamon, my husband does not like nutmeg. If you are preparing this recipe with Granny Smith Apples, the amount of sugar is perfect or TBS less, it gave the pancake the nice crust. Some reviewers suggest reducing sugar, I would only do this if you using a sweeter apple(see note below). The butter could be cut by 3 TBS but I used the 1/4 cup(4 TBS) because my cast iron skillet was recently seasoned. I am giving this a 4 1/2 stars. I would definitely make again. Thanks for sharing! *A mix of sweeter/tart apples are Jonathan, Stayman-Winesap, Cox's Orange Pippin, and Jonagold. *Sweet Apples are Braeburn, Fuji, Mutsu, Pink Lady, Suncrisp, Rome Beauty and Empire. I would definitely use less sugar with these apples, but go with the Granny Smith, you would probably would use little less butter as well. My Suggestion, go with 2 Granny Smith apples.

Slow-Cooker Pepper Steak

Butternut Squash Soup

I would make this again, it was very good. I only made a couple of adjustments, roasted butternut squash for 45 minutes, used 2 more cups of broth in the blender, and only used 4oz of cream cheese (it was very creamy). Gave it 4 stars because I tweaked it with added broth and cream cheese. Flavor was very good.

Spinach Quiche

We really enjoyed this recipe; it was fluffier than others I have made in the past. I only used 4 tablespoons of butter and it was plenty, with all the cheese it was rich enough and you really do not need it. I made this twice once with cheddar and feta, and one with Swiss and little cheddar(little bland), both very good, but we prefer recipe as stated. When making my quiches, I have always brush 1 tsp Dion mustard on bottom of uncooked pie crust, for little flavor. I mixed all the ingredients together, instead of pouring the egg mixture over the spinach mixture, and it came out great. I would definitely make this recipe again.

Blueberry Cream Muffins

Wonderful recipe. I made this recipe with some modifications from MommyFromSeattle, I did use 3 cups of frozen blueberries, 50/50 sugar and light brown sugar, added ½ cup extra sugar to the frozen blueberries, (use the streusel topping recipe, from To Die For Blueberry Muffins off this site). I added an additional 1 tsp of Vanilla too. I was a little worried about the texture of my batter, it was a little gooey, I over mixed but my muffins turned out great. My husband and I loved them. Thank you KK3 for this delicious recipe and the other reviewers for the tweaks. I will defiantly make this recipe again.

Best Big, Fat, Chewy Chocolate Chip Cookie

Made this cookie and we liked the chewiness and the texture, but my husband and I thought it was a little too sweet. No problems with baking as others did. I might try tweaking recipe a little less sugar. Update: I made a batch of the "original recipe cookies" on the yellow bag to compare the two cookies…I have to admit, I enjoyed this recipe better the second day, I prefer these. My husband still prefers the cakey kind. I did a taste test and Everyone (except my husband) preferred this recipe. I will try one batch with less sugar to see the difference. So I up the star value to 4 1/2.

Herb Rubbed Sirloin Tip Roast

Wonderful taste! The rub is more spicy than herbed, but it has a great taste. My beef tip roast was tough piece of meat, but would buy a better cut and use this rub. I would definitely make this recipe again. Thank you for recipe.

Creamy Rice Pudding

We enjoyed this recipe; this was very close to Kozy Shack. Great thick and creamy texture. Made with 1 ½ of skimmed milk and ½ cup of half and half (that is what I had in the house). I did temper the egg with the mixture but the egg still got a little stringy. I did omit the raisins; my husband does not care for them. Would make this again, but will temper the egg better next time. Thank you for sharing.

Ginger Glazed Mahi Mahi

This was a very good recipe. It had wonderful flavor but next time I prepare this recipe, I will reduce the balsamic vinegar to 2 TSP. The balsamic was slightly overpowering and I did agree with another reviewer, it does not need additional salt. I will be making this recipe again. Thanks for sharing.

Flourless Peanut Butter Cookies

I am a little surprised on the rating on this cookie! I do understand it is a three ingredient, but I'd rather eat a celery stick with natural peanut butter, than this cookie. It had a weird sweet and salty taste. I even added a little more sugar to half the batch due to the weird sweet and salty taste, with no help. I did add the 1 tsp of vanilla, 1/2 cup white sugar, 1/2 cup brown sugar and I used new jar of Smuckers Natural Peanut Butter without stirring in the oil on top and discarding (one reviewer said that she used natural peanut butter and they were very oily). The texture of my cookies was fine. My husband thought at first that I added too much salt to the recipe and thought they were “ok” but nothing special. I would try another recipe or eat a spoonful of peanut butter instead.

Baked Orange Roughy Italian-Style

My husband does not care for fish fillets, but this is one he enjoyed. It was a fast, easy, and delicious. Used another reviewer suggested soaking fish in milk, great suggestion. This one will stay in my recipe box. Thank you for sharing.

Russian Tea Cakes I

I have made these 4 times, everyone loves them. My Husbands and Father-in-Law’s new favorite cookie. This is a great cookie. As per another reviewer, I reduced the flour by ¼ cup, it worked great. I use a very small melon/ice cream scooper (it saved time), and I cook them a couple minutes longer (they did not crumble). I did make one batch that did not taste right, because of a generic salted butter (it had too much salt), had to throw them out. Thank you for sharing Odette!

Grandma's Lemon Meringue Pie

I think this recipe was very good. I made this Lemon Meringue for Father’s Day, everyone raved about how delicious it was. Wish there would have been better instructions; I have never made a Lemon Meringue Pie before. Used suggestions from this site and another site, for complete instructions. Also added cream of tarter and pinch of salt to my Meringue. Did use 2 zested lemons, on fine grate, did not have a problem with “bits” like others. Did NOT have a problem with running or weeping, did cool pie at room temp for an hour (thanks Trudy for suggestion). Worth the time to make this recipe! Thanks Emily for sharing this recipe.
