Zucchini Cakes

Flavor could fool you! Be sure the zucchini is very finely shredded. Does not stay together real well, as a "cake".

Grilled Peppers and Zucchini

I used yellow squash bec/ I didn't have zucchini. Grill the pepper quarters directly on grill first to get marks, before adding to foil packet. Also sprinkled top of packet with feta cheese. Delish!

The Burger Your Mama Warned You About!

The flavor was okay, but the meat did not stick together at all. On the grill, it was like we were cooking a meatloaf that had fallen apart. It made a HUGE mess. We ended up taking the meat and adding barbeque sauce for "sloppy joes".

Chicken in Baskets

Milk should be cut in half. 3/4 cup made it way too thin. Tasty and quick. I cooked up some fresh mushrooms and just had that in the mixture.

Bacon Mushroom Swiss Meatloaf

I agree with what many before me have said--too blah. Definitely needs more kick. I may try it again using some of the suggestions of garlic powder, salt & pepper, worcestershire sauce, etc. I may even try powdered ranch dressing mix.

Golden Lasagna

Good. Go easy on the noodles. Ricotta is hard to spread over the chicken. Don't skimp on the onion. It needs the seasoning.

Bacon Wrapped Stuffed Mushrooms

I added the stems, finely diced, bread crumbs, a little basil pesto, crushed garlic clove, parmesan cheese, grated sharp cheese--til the mixture held together and wasn't too soft.

Eggplant Delight

Scrumptious recipe, and if there is any left, it is even better the 2nd time, when heated up with more cheese. I added a slice of tomato on each eggplant slice and baked it at 350 for an hour. This recipe is a keeper!

Brie Pecan Rollups with Raspberry Sauce

The raspberry sauce definitely makes the difference. I used cream cheese. Make sure the pecans are FINELY chopped bec/ they don't stick very well. I used frozen raspberries, and added less sugar and almost no water. Makes it thicker

Honey Glazed Ham

Taste is great. Needs to be scored before starting to cook. Follow some of the reviews, and use brown sugar, honey and butter. Thickens really fast. Best to brush on, frequently.

Stuffed Mushrooms III

11/27/08 Thanksgiving. FAIR! The pesto is a really good flavor, but ricotta is kinda blah. I pre-cooked the mushrooms a little to cut down on liquid in the pan. Maybe try with cream cheese and a strip of bacon wrapped around it?! Needs pizazz.
