decrease the amount of flour. I made it with gluten free flour. Needs a little brown sugar in the coating mixture and more cinnamon. Also, try adding toasted pecans

Taco Bake I

I made it just like it said.....but I served it with a lot of extras---shredded lettuce, diced fresh tomatoes, black olives, fresh avacado, sour cream! So delightful with all the trimmings! Like a taco in a casserole.

Cucumber Sandwiches III

Delicious! The cheese spread gets "saltier" on the 3rd or 4th day from the dressing mix, but it is delicious, easy and great with cucumbers, and I added tomatoes, too!

Chicken in Baskets

Milk should be cut in half. 3/4 cup made it way too thin. Tasty and quick. I cooked up some fresh mushrooms and just had that in the mixture.

Stuffed Mushrooms III

11/27/08 Thanksgiving. FAIR! The pesto is a really good flavor, but ricotta is kinda blah. I pre-cooked the mushrooms a little to cut down on liquid in the pan. Maybe try with cream cheese and a strip of bacon wrapped around it?! Needs pizazz.

Eggplant Delight

Scrumptious recipe, and if there is any left, it is even better the 2nd time, when heated up with more cheese. I added a slice of tomato on each eggplant slice and baked it at 350 for an hour. This recipe is a keeper!

Make sure your cucumbers are seeded for this recipe. I added fresh dill and celery salt because it needed a little more pizazz. With the additions, it was very good.

I agree with what many before me have said--too blah. Definitely needs more kick. I may try it again using some of the suggestions of garlic powder, salt & pepper, worcestershire sauce, etc. I may even try powdered ranch dressing mix.

Potato Skillet

Delicious! I doubled recipe..and probably did not need to quite double the eggs. I ended up turning the skillet before I put cheese on it. Still delightful. Probably would save time to parboil the potatoes. Would be great with peppers, mushrooms, sausage, etc.

Chicken Dijon in Pastry Shells

Not very good. Aunt Nettie's Chicken a la King was much better. (But the puff pastry I had wasn't too good either. I also doubled it, and used one cream of mushroom and one cream of chicken soup.

Okay, but not that great. I tried one reviewers suggestion to do it in the oven so that all the juice could be used, and put over rice. I did, but didn't find it anything exceptional. Might be better on the grill, but.............
