I got married young and had to learn to cook from the get-go. By 23, I had three boys and a husband who love to eat! Now I have five children, so I cook a lot of large-quantity meals. I love cooking and trying new recipes, but I hate to clean up! Thank goodness I have my own 5-man clean-up crew!
My favorite things to cook
We love Mexican food, so I make a lot of enchilada, burritos, etc. I enjoy finding new recipes that are a big hit with the family. Anything they love to eat, I love to cook.
My favorite family cooking traditions
I love the basic family traditions of making cookies at Christmas and cooking a big turkey dinner on Thanksgiving. One tradition we have is a spin on an old Greek tradition of New Year's bread. I bake New Year's muffins and bake a foil-covered coin into one of the muffins. Whoever gets the muffin with the coin will have a year of good luck!
My cooking triumphs
My chicken enchiladas are a hit with everyone who has tried them. My hubby loves my frenched rack of lamb, and my kids are crazy about my broiled parmesan tilapia.
My cooking tragedies
The first time I cooked for my husband (then my boyfriend). I made (or tried to make) chicken parmagiana. The outside was almost burnt, the inside was barely cooked, and it was not good. Oh well, what can you do? I was only 17...he married me anyway :o)

Easy Slow Cooker French Dip
This has become a staple in our home. It is the most-requested meal by far! I can't imagine anything easier or more tasty! I've given this recipe to many friends and they all rave about it as well. I've found that we like it best when made with a darker beer such as Guinness or New Castle.

Corn Dog Muffins
I've made this many times and everyone loves it- adults and kids alike! Perfect for a Sunday afternoon football game or a quick evening treat. Yes, I've even served it for dinner with a side of baked beans and a veggie.

Dorito(R) Casserole
I used an 11 Oz bag of Doritos and still thought it was too much. I also used a yummy Mexican shredded cheese blend. My kids thought it was okay but pretty bland. I agree. If I were ever to make this again (unlikely), I would use fewer chips, more burger mixture and top with lettuce, tomato, and sour cream, as a previous reviewer suggested. I would also consider wrapping it in a tortilla.
