Delicious Egg Salad for Sandwiches

Reviewed: May 3, 2011
I used finely chopped celery instead of green onion, and then added a bit of onion powder as well.

Raspberry Ice Cream

Reviewed: Jul. 5, 2009
I adapted the recipe with majority half and half 3/4 c evap skim milk and then reg skim milk to make 3 cups total. I added two homegrown eggs (minimal salmonella worries) and split the sugar with half Splenda. I strained the blended raspberries to remove seeds. Very good!

Poppy Seed Dressing II

I'd use half an onion next time, but excellent dressing!

Connie's Zucchini "Crab" Cakes

Reviewed: Jul. 19, 2009
Needed more seasoning as written, but that may be because I had to continue wringing moisture out of the mixture even as I was making it into cakes so I'm sure I lost some of the old bay down the drain. Next time I would shred the zucchini earlier and let it sit a lot longer to drain it's moisture out. Nevertheless, this is a winner way to eat up zucchini. I used the baking method, rather than frying, which was healthier and worked great!

Beet Soup

I used some greek yogurt for part of the dairy and added some lemon juice. Both were good additions we thought.

Pastry Cream

Reviewed: Jan. 27, 2010
Delicious, and not hard at all! I added 1 tsp artificial rum flavoring. Good, but that amount was almost too much - would cut that in half if doing again.

This icing is outstanding. I added three drops of lemon extract to pump up the lemon flavor.

Egg and Spinach Casserole

Reviewed: Feb. 2, 2010
Added two extra eggs to stretch the meal. Not enough spinach, added more (mine was fresh steamed), plus 1/4 cup fresh parsley and full cup of chopped onion. Had some feta so I threw in a crumbled handful. Added lots of spice - generous paprika and chili powder, plus 1/4 tsp garlic powder, basil, black pepper, and a little salt. Left the butter out. I will use this recipe again with the changes noted!

Marie's Easy Slow Cooker Pot Roast

Reviewed: May 23, 2010
Didn't need ANY liquid in my slow cooker for perfection. Cooked nine hours and had plenty of liquid when done. Don't add carrots or potatoes until last hour or they'll go mushy. I like turnips done this way.

Raspberry Sour Cream Pie

Reviewed: Jul. 7, 2010
I did not even use a pie crust - still awesome! I increased raspberries to 5 cups - perfect! Also used greek yogurt in place of all the sour cream - worked just as well and healthier. This is a keeper. I will be using this recipe with our cherry plums in a couple of weeks when they ripen. BTW, I was able to get it all in a large 10" deep-dish pie plate.

Dutch Apple Pie with Oatmeal Streusel

As always with pie recipes, I made this in oven-safe ramekins without a bottom crust. Needs less baking time. Excellent recipe!

Jamie's Cranberry Spinach Salad

Reviewed: Apr. 22, 2012
Dressing is 5 stars! But spinach salad must be made with fresh strawberries, or mandarin oranges if fresh strawberries are way out of season, never with dried fruit. Blech.

Cabbage Fat-Burning Soup

Reviewed: Dec. 18, 2008
My fiance loves it! He just ate three bowls. I added garbanzos, chili powder, cumin, and garlic to the soup, and used veg broth (like 3x more than recipe). DF added some sriracha (rooster) sauce for heat. Froze a lot of single servings for lunches, and double servings for dinners. Thanks! Filling, cheap, and healthy!

Sean's Falafel and Cucumber Sauce

Reviewed: Mar. 1, 2009
Making this, I really thought it was going to be way too much onion, but I wanted to give the recipe a chance and I'm glad I did. I might bump the seasoning up a notch for the next go-round, but this was delish! My mother thought I was crazy serving falafel, which she had never had and only heard of. She asked for seconds and suggested I serve it more often. The sauce really made it great. The recipe is right that too much bread crumb can make the finished product too dry. Be careful.

Banana Pumpkin Bread

I used dried chopped apricots and dried cherries, instead of raisins. I also substituted whole wheat flour for half of the flour and Splenda for the white sugar. Turned out wonderfully! This is a keeper!
