Egg Casserole

Too dense and chewy. Not really cheesy. Not really yummy in any way. I won't make this again.

Egg and Spinach Casserole

Added two extra eggs to stretch the meal. Not enough spinach, added more (mine was fresh steamed), plus 1/4 cup fresh parsley and full cup of chopped onion. Had some feta so I threw in a crumbled handful. Added lots of spice - generous paprika and chili powder, plus 1/4 tsp garlic powder, basil, black pepper, and a little salt. Left the butter out. I will use this recipe again with the changes noted!

Pastry Cream

Delicious, and not hard at all! I added 1 tsp artificial rum flavoring. Good, but that amount was almost too much - would cut that in half if doing again.

Whipped Cream Cream Cheese Frosting

Too runny. I chilled everything before whipping, kept it chilled before folding, chilled cake after frosting. I used powdered sugar instead of granulated, but still sagged a bit. It was very yummy, not too sugary, and light tasting, and I might make it again in certain situations, but not a pro finish cake frosting. Should be an awesome treat on top of fresh strawberries in summer!!!

Squash with Tomato and Feta Cheese

Not my favorite. The sauce was not moist enough. And the dish didn't have enough flavor (and I had added a lot of cayenne, paprika, and poultry seasoning, and pepper that the recipe didn't call for).

Hot Artichoke and Spinach Dip II

Connie's Zucchini "Crab" Cakes

Needed more seasoning as written, but that may be because I had to continue wringing moisture out of the mixture even as I was making it into cakes so I'm sure I lost some of the old bay down the drain. Next time I would shred the zucchini earlier and let it sit a lot longer to drain it's moisture out. Nevertheless, this is a winner way to eat up zucchini. I used the baking method, rather than frying, which was healthier and worked great!

Raspberry Ice Cream

I adapted the recipe with majority half and half 3/4 c evap skim milk and then reg skim milk to make 3 cups total. I added two homegrown eggs (minimal salmonella worries) and split the sugar with half Splenda. I strained the blended raspberries to remove seeds. Very good!

Soft Mahi Mahi Tacos with Ginger-Lime Dressing

We thought this was way too sweet, and not nearly spicy enough. The dressing and fruit reminded us of a pina colada and it did not go with fish. I like fish tacos with fruit salsa, but this wasn't my kind of recipe. Might be better with more jalapeno and less/no sour cream.

Sean's Falafel and Cucumber Sauce

Making this, I really thought it was going to be way too much onion, but I wanted to give the recipe a chance and I'm glad I did. I might bump the seasoning up a notch for the next go-round, but this was delish! My mother thought I was crazy serving falafel, which she had never had and only heard of. She asked for seconds and suggested I serve it more often. The sauce really made it great. The recipe is right that too much bread crumb can make the finished product too dry. Be careful.

Tofu Chocolate Cake

I had leftover tofu that we didn't use for another dinner recipe. We have decided this was the best way we've ever used tofu. I didn't have chocolate liquor so I just melted some dark chocolate in the same amount. Seemed great.

Cabbage Fat-Burning Soup

My fiance loves it! He just ate three bowls. I added garbanzos, chili powder, cumin, and garlic to the soup, and used veg broth (like 3x more than recipe). DF added some sriracha (rooster) sauce for heat. Froze a lot of single servings for lunches, and double servings for dinners. Thanks! Filling, cheap, and healthy!

A-Number-1 Banana Cake

I didn't think this was as strongly banana tasting as I had hoped. Perhaps I should have just made banana bread and frosted it. It was moist, and I will try it again sometime.

Spanish Slaw

I added cumin and lots of cilantro or this would have been bland while also being too sour with vinegar for my family's taste. But it was fresh tasting and went really well with black bean enchiladas. My fiance gives it 4 stars though.

Italian Style Pork Chops

Good chops, but the breading was pretty soggy, even with cooking at high temps. Still very good though. I used buttermilk and a little butter. I think the buttermilk is good for moistening, sticking crust, and tenderizing.

The Rated R for Richness Chocolate Cake

Holy moly! This cake was superb. The frosting was fabulous. Cake had a smooth dry crumb with dark rich mellow flavor. Frosting was smooth and thick and shiny and dark, everything a frosting should be in my opinion. I didn't change a thing, and wouldn't change anything next time! Well, maybe add some raspberry filling, but not everyone in my family likes that as much as I do. Everyone agreed this was a KEEPER!

Butterscotch Bread Pudding

Everyone in my family was skeptical because we've never had good bread pudding, but I had a bunch of leftover whole wheat crusts from a party, so I tried it. I used milk chocolate chips because I didn't have butterscotch on hand. Served a la mode, vanilla. Sooo good! Everyone admitted it was super good after all.
