Rice Casserole

A good recipe for leftover rice. I did have to change a bit. I had 3 1/2 cups of rice,I used a whole can of corn, 1 1/2 cups of cheese, 2 tablespoons of oregano, salt and pepper. Still seemed to be missing something. I will try some different spices and maybe add more veggies next time.

Banana Boats

Instead of the chocolate chips, I took 4 different types of chocolate bar and cut them up into pieces. Then everyone chose what kind they wanted in their boat. SO good! I highly recommend this with your favorite candy bar.

Apple Pie in a Glass

Spinach Stuffed Chicken Breasts

I thoguht this recipe was delicous. I used 3/4 cup of feta because I love feta! I also added 2 tsp of oregano. I used fresh spinach and wilted it in the microwave. Everyone ate every last bite. I will definitly be amking this again.

Curried Chicken and Rice Salad

I am always looking for recipes for leftover rice and this one is so far the best! I found it a bit too creamy. Next time I will only use 1/2 cup of sour cream. I also omitted the chicken and added a bit more red pepper.

Tilapia with Creamy Sauce

I only used the fish spices in this recipe and got a different recipe for the sauce. I didn't change any of the spices but next time I will use less margerine or none at all. I made a sauce out of mayo, lemon juice, sour cream, garlic powder and dill. It worked great with the fish and left overs can be used for veggie dip.

Hudson's Baked Tilapia with Dill Sauce

After reading the reviews I decided that I would spice my fish differently but use the dill sauce from this recipe. Everyone was right about the sauce...delicious!! Leftovers goes well as a veggie dip. As for the fish I used lemon juice, dill weed, lemon-pepper spice and a bit of melted butter. It was amzing. Usually I find tilapia a bit bland but this turned out wonderful.

Salsa Chicken

So simiple but so delicious. I was skeptical at first but it turned out delicious. Besides cutting the recipe in half, I changed nothing. Next time I might add some green onions or a bit more spices but it is definitly not needed.

Alfredo Potatoes

I thought these were delicious but I think a little less alfredo next time. I could taste potato anymore and they were a bit runny. Next time I will use 1/2 cup alfredo and maybe add some bacon bites

Creamy Au Gratin Potatoes

Why do mine turn out so runny? I have tried to make this twice. The first time I was a little rushed so I though it was my fault. The second time I paid extra attention to the cheese sauce. I made sure it was as thick as it would go. I even broiled it in the last couple minutes which did make the top crispy and delicious. I added green pepper to the potatoes amd added garlic powder to the cheese sauce for some flavor. For the amount of time this is I don't think it is worth the work. It also tasted like it was missing something.

Curried Carrot Soup

I have made a soup very similar with ginger instead of curry. I added a tbsp of each and some tumeric. It was really good. You can switch it back a forth depending on who you are cooking for. If they don't like curry then use just ginger and vice versa. Either way is delicious.

Curried Egg Sandwiches

I think curry in an egg sandwich is delicious. I did have to add a few more things though or the curry is very over powering. I added 2 tbsp of green onion, 1 tsp of paprika, s&p and I added cheese and lettuce to the sandwiches.

Parmesan Spinach Balls

These are great. I have made these a long time ago and I lost thew recipe. I am so happy to stummble apon it again. I do it a bit different though. I use 1/2 a yellow onion. sauteed with 2 cloves of garlic. 2 tsp garlic powder and 2 tsp Italian seasoning because I used regular bread crumbs.

Grilled Sausages with Caramelized Onions and Apples

Delicious anmd simple! I only used 1 1/2 onions and 2 apples and there was still tons! I used red wine vinegar and I also added one more tbsp of the vinegar because my boyfriend doesn't like sweet flavor with his meats. He was sceptical but in the end He loved this recipe.

Baked French Fries I

These are wonderful. Much healthier then deep frying and you can play around with the seasonings. I used onion salt instead of powder, added some curry powder and a bit extra chili powder for some extra spice.

Black Bean and Salsa Soup

I had to make some changes to this recipe. My cans of beans were 19 oz. I didn't have any vegetable broth so I didn't drain the beans (liquid in cans added up to 1cup). I added half a cup of water. 2tsp cumin. I added 1 cup corn to the saucepan and sprinkled shredded cheddar on top. Next time I might use less water (veggie broth) so that I get a bit of a thicker consistency.

Golden Pork Chops

I have been making a recipe similar to this for a long time. I usually cooked it in a skillet. I tried baking it this time and it was still just as delicious. I scaled down the recipe because there was only 2 of us. I added 1 tsp oregano and garlic powder. I didn't have any acutal mushrooms on hand so I didn't use them. It still was delicous. I might try to sautee the onions next time before they go on the pork chops

Herbed Marinated Lamb Chops

This was delicious. I made a few changes. I was only cooking for 2 so I sliced the recipe in half. I used 2 tbsp of red wine vinegar because I didn't have any red wine available. I added a bit more mint and 2 cloves of garlic instead of one.

Baked Salmon with Coconut Crust

I thought it was delicious. My husband is not a big fan of coconut. I did find it a little dry and had to serve it with a garlic mayo sauce that I whipped up.

Mushroom Pork Chops

I have been making this same recipe for years! It's quick and cheap. I serve it with some steamed veggies over a bed of rice because the extra sauce is great on rice.
