The tacos were delicious! I prepared Taco Seasoning 1 from this site, I left out the jalapeno, but added a can of black beans. Only used half the squash otherwise would have been too much. Topped the taco with salsa, shredded cheese and lettuce.

Red Enchilada Sauce

Went very well with the spianch enchillada recipe. As suggested by other reviewers -used tomatoe paste. Used stock instead of water - about 2 1/2 cups as it was too thick; 1/2 cup of salsa and added 1 tbsp. of brown sugar.

Spinach Enchiladas

Tofu Parmigiana

Absolutely declicious, even my 5 year old who tends to be picky completely enjoyed it. I drained the tofu of excess wate with paper towel and dredged the slices in flour, then egg and then the crumb mixture

Best Spanish Rice

So easy and so delicious!! Used 1 cup of rice , added a pinch of saffron when browning. You really have to let the rice brown. Kept the 2 cups of broth and used a homemade corn salsa.

Spiced Quinoa

Love this recipe. I have made it several times now. Made changes as suggested by other reviewers. Used cranberries and cooked it with the quinoa. Used silvered almonds in place of pine nuts. So delicious!!
