Dry rub for ribs

Delicious! I cooked my ribs in a slow cooker on low for 8 hours. I placed the rack of ribs on some crumpled foil in the bottom of slow cooker (to keep ribs out of the fat that drips). Ribs were tasty and fall off the bone. This is the only way I cook my ribs now. BBQ sauce can be added later for those who like saucy ribs.

Greek Orzo Salad

This salad is really good. I modified it quite a bit, based on the ingredients I had, but it turned out great. I used cucumber, sun-dried tomatoes in oil, grated cheddar, red onion and black olives. Since I didn't have artichokes, I used 1/2 cup of Farm Boy Greek Dressing and added salt and pepper. Delicious!

Herb Rubbed Sirloin Tip Roast

This is a great recipe. I modified it slightly (cut the oregano and thyme in half because I'm not a big fan and skipped the oil all together). Placed the roast coated with the rub in a ziploc bag in the fridge for about 6 hours. I also cooked my roast on the BBQ. I placed a drip pan with 1/2 inch of water under the middle grill of a 3-burner barbecue. Heated my BBQ to approx. 400°F (200°C) with lid closed. Turned off the middle burner under the drip pan than placed the roast on the grill over the unlit burner and roasted at medium-high heat with lid closed. For medium-rare, cook 20-25 minutes per pound. Then wrap your roast in foil and let it stand 10-15 minutes. DELICIOUS!

Salmon with Mango and Brie

I sprinkled the salmon fillets with sea salt, black pepper, paprika and garlic salt. Although my mangos were fairly ripe, they stayed intact and didn't become smooth. I'm not too sure I like the combination of salmon with brie and mango, although separately, they're some of my favourite foods. Probably won't be making this again.

Tuna-Stuffed Avocados

Couldn't help adding my personal touch to this recipe... I added sliced black olives, finely chopped dill pickles, a dash of dill weed and garlic salt, and chopped tomatoes. Yum!

Tangy Cauliflower Salad

I made this recipe because I wanted to do something with the cauliflower and the grapes I had. I used red grapes instead of green and used toasted slivered almond and pecans because that's what I had on hand. I found the combination of ingredients very interesting. I just thought the dressing was a bit odd and slightly bland (there was too much of it as well). It could use something else to enhance the flavour, I just don't know what.

Spicy Salmon with Caramelized Onions

This recipe is very good and quite spicy for people who aren't used to eating spicy foods. The second time I made this recipe, I omitted the onions and cooked the salmon in the oven at 400 degrees for about 20 minutes, and also added some maple syrup in the bottom of the pan. I do find the rub a bit too thick (perhaps it makes too much for 2 salmon fillets?). I just removed most of the rub when I ate it and it was still quite tasty.

Maple-Drizzled Apple Muffins

These were very good. I can never stick to a recipe so here's what I modified: for the 2/3 cup of sugar, I did half brown sugar and half white; I replaced half the quantity of butter with apple sauce; I grated my apples instead of chopping them; I omitted the pecan halves and the glaze. The only negative thing I have to say is that I could not taste the maple syrup. Very good muffins nonetheless.

Red Skinned Potato Salad

Added fresh chives and parsley. Used a mix of mayonnaise and miracle whip. Replace the onion with 4 green onions. Only added the bacon before serving the salad so it wouldn't get soggy.

Fresh Cherry Cobbler

Made a big mistake the first time I did this recipe because I tried cutting it in half and I replaced the sugar with splenda (to make it diabetic friendly). It turned really hard and the cherries didn't sink in the batter. I redid the recipe with the original ingredients, but I added more cherries (used sweet cherries instead of sour) and also used blackberries, and I added cinnamon and vanilla extract like others recommended. I found that the butter taste was overwhelming (too much butter perhaps), it was good overall but I probably won't make it again.

Jamie's Cranberry Spinach Salad

Very good salad. I toast the almonds without the butter, use 1/4 cup of sugar instead of 1/2 cup and use extra virgin olive oil. Brought it to a couple of times to a potluck and was asked for the recipe. Super easy and delicious!

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

I modified this recipe a little: used white and cremini mushrooms, shrimps and scallops, as well as 1/4 cup of milk and 1/4 cup of white wine. Overall, the recipe was good (very high fat content though!) but I found that it was missing a little something (besides salt and pepper). I might use onion and chives cream cheese instead next time.

Crunchy Date Rounds

Teaspoon sized dough rounds makes alot more than two dozens. I made teaspoon and tablespoon size rounds and both were good. The rounds are indeed quite crunchy. I probably would cut my dates in smaller pieces next time. I used vanilla and almond Special K cereal. Good, but I prefer chewy cookies.

Artichoke Spinach Lasagna

The only modification I did was to omit the rosemary. The lasagna turned out great! You could probably add more veggies (mushrooms, etc.) and substitute the tomato sauce for an alfredo sauce if you wanted. Everyone liked it!

Lemon Trout

AWESOME RECIPE!! I did change some of the ingredients, but it turned out to be delicious! I use italian bread crumbs with pepper, lemon zest, cayenne pepper, salt and onion powder. And sometimes use salmon fillets instead of trout. I also marinate the fillets for 15-20 min in lemon juice (one lemon). And cook in about 2 tbs garlic-infused olive oil. I do this recipe regularly now!

Tofu and Veggies in Peanut Sauce

This was pretty good. I pan fried the tofu with peanut oil, garlic, freshly grated ginger and onions before adding it to the wok with the other veggies. I replaced the red pepper with carrots and also substituted honey for molasses. It turned out good, but my boyfriend and I felt that that was something missing. Perhaps more garlic or more soy sauce. I also used crunchy peanut butter which adds great texture. Overall, pretty good.

Strawberry-Mango Pie

This pie was good, but I wouldn't say amazing. I did alter the recipe according to what I had on hand, but I don't think it this had much impact on the final result. I used lemon and lime juice instead of apple juice because that's all I had. I had an 8" pie crust so I ended up getting rid of all the excess liquid that was left with the cooked mango and strawberries. I also omitted the nutmeg. I thought there was way too much crumb mixture (even though I didn't use all of it). If I was to do this pie again, I would probably not do the crumb mixture and just use a regular pie crust on top.
