Mushroom Pork Tenderloin

DELICIOUS and easy! And LOVED the added touch of the mushrooms!! Followed recipe ingredients, but just more of them because I cooked both tenderloins since they came together in one package, so it was a little over 2 lbs. Doubled everything except the garlic and mushrooms, which I probably used 4 times as much. I already planned to double the garlic (2 cloves), so I used 4 for both tenderloins. I followed instructions to rub, but pressed them in a garlic press first... releases more of the garlic flavor and the garlic pieces stay on the meat and in the subsequent juices. I also used more than doubled the mushrooms... I sliced an entire 8oz container of fresh mushrooms (a few make a cup, so it ended up maybe closer to 3-4 cups?). Only change to ingredients is that I added a little cajun seasoning because once you've lived in Louisiana, everything just has to have it! : ) I sprinkled it on the meat before browning and with the rest of the spices that are added before simmering. It simmered a little longer because it was double the meat and someone got home late! But it was still delicious!! (I did not try to make the gravy because I used one we always enjoy, but I may try that next time!) Don't hesitate to give this one a try!!

Strawberry Orange Banana Smoothie

This was a good, refreshing smoothie that was easy to make with ingredients we almost always have at home. It is not as creamy as those make with yogurt and/or milk, but definitely easy and quick. After a taste test, my only change was adding some more fruit to take away some of the tartness of the orange juice. I could have drank it either way, but my daughter preferred it, (and I agree), with a few more strawberries and touch more banana. Also, if you are looking for that slushy texture, but don't want to water it down with too many ice cubes, use frozen bananas & strawberries... you could even freeze some OJ in ice cube trays! We might try that! Overall, a good, quick, easy way to get in a great serving of fruits!!

Florentine Artichoke Dip

Big Hit! I needed a quick, easy spinach artichoke dip recipe since I knew I would have only limited time to prepare for a week-night gathering. This recipe called for minimum ingredients and had great ratings. Due to time constraints, I did not read review suggestions and simply followed the recipe to a tee. My first attempt at spinach artichoke dip and several people ended up asking for the recipe! I have read some of the suggestions and next time I will try a few of them including lowering the cream cheese content, adding sour cream, adding mozzarella or italian cheese blend, and maybe using marinated artichoke hearts for a little extra flavor...just to see how that turns out. But once you go changing all of that, it's not really the same recipe, now is it?!?! If you need a quick, easy recipe AS IS, this one does an A+ job!

Cajun Chicken

Highly recommend for a fast weekday dinner! I wanted a new, but quick, easy recipe for chicken without having to run to the store for ingredients. This was great! Just a few ingredients, a quick marinade time, add a simple side dish and you're done....and it tasted great! There were comments in other reviews of this turning out too salty, but there are several low sodium cajun seasonings readily available at the grocery... no need to sacrifice flavor by lessening the "cajun" spice. Next time I will try it marinated all day or overnight! (But it turned out great even with just the 20 minutes or so I did this time.) Check out my photo soon on the photos page!
