I'm only giving this 4 stars because I made a small modification: I used 1/2 cup applesauce in place of the margarine. Leaving everything else the way it was, this is a great recipe. I cut it into 10 thick slices that we can put a little butter or jam on for breakfast or just leave plain for a lunch box snack.

Eggless Ginger Cookies

Made these tonight for a function where a child is allergic to milk and eggs and they came out GREAT! We used cookie cutters and followed the recipe to a T and they taste wonderful. Will be using this recipe again and again!

Baked Potato Soup

I tried this recipe during the first cold snap. It was a huge hit with my daughter and my mother in law! I added carrots, celery and mushrooms to it and left the skin on some of the potatoes. It was heavenly!

Simple White Cake

Leftover Squash Muffins

Nice flavor and a good way to get more veggies into a person, but my muffins came out extremely dense... I mean borderline hockey puck dense. Maybe because I substituted the butter with applesauce? In any case, my 3 year old seems to like them once I microwave them for a few seconds and add a little pat of honey butter.

Good Old Fashioned Pancakes

I did two versions of this recipe. The first version I didn't change a thing and it was amazing. The second version knocked the socks off of both myself and my daughter. I added vanilla sugar and cinnamon to the pancakes while they were cooking. So good they don't need syrup!

Banana Cake X

Oh my GOSH! This was phenomenal! Since I'm allergic to citrus I left out the lemon juice and this cake STILL rocked! I made it as a sheet cake and it's already more than half gone. I will be using this recipe for my daughter's birthday cake!

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

Oh my GOSH! I just made these with my 2 year old on Saturday and they are awesome! I took another reviewer's advice and spooned a little cake batter into the muffin tin before putting the brownie batter in and then covered it with more cake batter. I haven't iced them (chocolate icing is too rich for these, vanilla is not enough, and I have a peanut allergy). Amazing! We will definitely make these again... perhaps for a Christmas gift.

Self-Rising Flour

I LOVE this recipe! I hardly ever buy self rising flour because I rarely use it, but this will keep me from buying boxed mixes of cakes and pancakes. It's so simple!

Pancakes

Oh my gosh! This is to die for. I threw in 3 tsp of sugar and some chocolate chips and we didn't even need syrup. My toddler LOVED these pancakes. I used the recipe for self rising flour (found on this site) and will never go back to buying the boxed stuff again. If I could give it more than 5 stars, I would. Light, fluffy,and just plain old good!

Mozzarella Parmesan Chicken

Delicious! I used cream of chicken soup, mushroom soup with garlic in it, shredded mozzarella and parmesan, and seasoned my chicken with a bit of oregano, sage, garlic powder and catanne pepper. Will definately make again

Lemon Square Bars

I made these three times and still didn't like them. The bottom crust came out too hard and I followed this EXACT. Haven't experimented any more, but when I do I will make modifications
