Sweet and Sour Chicken II

Another winner, thanks for the recipe! I also fried my chicken in a cornstarch coating, and then subbed cornstarch for flour in the sauce (mixed with ketchup). We didn't have -ANY- of the veggies but even without this was a great recipe. Sure to be a winner with the veggies too.

Baked Sweet Potato with Onions and Red Peppers

We LOVED this recipe, but we made a few tweaks: 2 bell peppers, caramelized with the onions (butter, brown sugar, salt), and lite sour cream instead of yogurt. We also used ground turkey instead of veggie meat. Absolutely delicious!

Mongolian Beef and Spring Onions

We didnt have spring onions, so diced a reg. white onion and cooked with the ginger and garlic in the beginning. SO DELICIOUS! We loved this recipe.

Chicken Tagine

I loved this recipe. I only rate it 4 stars because my husband didn't love it (he thought it was "pretty good" -- thats not enough enthusiasm for me!). But I really customized this to what we had in our pantry, so perhaps I'll try this again when I have all the ingredients on hand. We omitted the eggplant, and we used apricot preserves (about 3TBL). Served with rosemary couscous. I also made this on the stove top. Once the ingredients were combined (sans couscous) I covered the pan and let it simmer for about an hourish. Turned out great. It's going into my recipe book!

Summer Chicken Salad

i love every part of this recipe and i can't believe its only been reviewed 33 times! this isn't your normal chicken salad but its so so good. letting it sit over night is key -- tastes good on the same day but tastes even better the day after. we also used 3 chicken breasts. instead of pecans we used chopped walnuts. love it!

Sloppy Joes II

who would have thought so few basic ingredients could create such a hearty, comfort-food dish? i used ground turkey and cooked it on a skillet with onions and diced garlic. left out the b.peppers, but put the drained and cooked meat in the crock pot. let it cook on high for about an hour with all of the other ingredients. came out great!

Asian Orange Chicken

My boyfriend said to me last night "I think this is my new favorite dish"! I also changed measurments of the cornstarch/water and eyeballed the rest. I made 3 cups of brown rice and sliced up 5 medium chicken breasts and I felt that there was plenty of sauce.

Cola Pot Roast II

i used cream of celery instead of cream of mushroom because i'm pregnant and the thought of mushrooms makes me gag. i also left out the brown gravy mix but added some fat free beef broth. the end result was a little soupy, but i know i could have added cornstarch if i had wanted to. i couldn't taste the coke, outright, but i will say the roast was delish, falling apart, hearty, flavorful, and it hit the spot. thanks for the easy recipe!

Six Can Chicken Tortilla Soup

We loved this! Easy and customizable. We used garbanzo beans, kidney beans, and black beans, as well as the corn. I only had diced tomatoes so to add spice I sprinkled the soup with Tony Chachere (which contains garlic, salt, red pepper) until the heat was to our liking. I also used 1 can of chicken broth and 1 can of condensed cream of chicken. Boiled a million (6-7) chicken breasts until done, and reserved some water for the soup bc the broth wasn't enough. Drained all other cans.

Chicken Paprikash

I have to admit, I've never eaten paprikash before so I wasn't quite sure what it was supposed to taste like. But if the real thing tastes similar to this then I'm sold! I used chicken breasts, because that's all I had on hand, and instead of water I used chicken broth. I had the cheap paprika so I added a little bit more to the pot to ensure I had enough flavor and coloring. I served over egg noodles (less carbs and fat than dumplings or rice). End result? No leftovers! Good and filling!

Kay's Spaghetti and Lasagna Sauce

I've been using this recipe for quite a while -- it's a good base recipe that can be altered as you see fit. Cook all day in a crock pot, use beef broth instead of the liquid in the canned tomatoes, change up the meats (italian sausage, ground beef, ground turkey, ground venison, etc.), add veggies (mushrooms, peppers, etc)... the possibilities are endless.

Shepherd's Pie VI

my boyfriend (although of irish decent) had never tasted shepherd's pie before -- so i decided to wow him with this recipe (although i've never MADE shepherd's pie before). and lemme tell you, i chose the right recipe! i made a healthier version by: using 1 lb. ground turkey, 99% fat free beef broth, fat free cheddar cheese, i can't believe it's not butter-butter and skim milk (to mash with the potatoes). after reading some reviews i decided to definitely mash the carrots so i boiled them with the potatoes and mashed separately. after layering the carrots on top of the meat, i layered sweet corn and peas. the only health factor that we were conscious of was the carbs -- but regardless this dish is FANTASTIC!! so homey, hearty, and delish.

Real Strawberry Cupcakes

I loved this recipe! The cream cheese frosting was the best part -- and I'm NOT a frosting gal. I diced some strawberries up into very small peices and sprinkled them on top for a pretty and dainty look.
