Banana Bread Cookies

I made this for my mother-in-law. The kids got to them first though. lol After reading that some said the batter was too thin I scooped the flour and they turned out great. I also added another banana and some black walnut flavoring. My toddler, who hates cookies, ate several before I finally caught her. A wonderful recipe.

Plain Cake Doughnuts

This recipe is wonderful!! Yes, it does start as a gooey sticky mess. Scoop it onto a pile of flour to knead a few times then flour well to roll out. They're tender and delicious. I got about 14 and the kids devoured them. I used a maple-flavored glaze. They did cook very quickly but I'm not sure of the temp since I just used the stove. Definately a new favorite recipe. I love how fast and easy these are.

Oven-Fried Catfish

This was a bit spicy for our taste, but not bad. I didn't have celery seed, so I used celery salt instead of table salt. I also forgot to spray with PAM before baking. I cooked it for about 20 minutes, turning it up to 450 for the last 5 minutes. Both sides got very crunchy. May be better with some flour mixed in though. Even my son that doesn't like fish gobbled this up, must be a keeper!

Tofu Chocolate Pudding

This is pretty good, but I used the soft tofu instead. It mixes up much creamier. So because of the change, I didn't give 5 stars.

Coconut Ice

I only gave 4 because I changed the sugar based on others' reviews. I also buy macaroon coconut (unsweetened) from an Amish store. These were wonderful! I have a horrible sweet tooth so they were great. But if you don't like "coconut flavored sugar cubes", this may not sit well with you. Thanks for the great recipe!

No Bake Cookies III

I LOVE these cookies. I lost my recipe and this is just like it. My son in now diabetic so I also cut back the sugar. And I usually make 2 batches, one without the cocoa. YUMMY!

Classic Thanksgiving Dressing With Parsley, Sage and Thyme

I thought it seemed dry so added a 2nd can of broth. Oops! It came out almost like soup. Everyone else LOVED it though. To be honest, I didn't try it because I like a drier stuffing. As written though, it would have been great to me too. Smelled WONDERFUL!

Cranberry Sauce

This was very tart, even after doubling the sugar. So to everyone else, maybe sweeten the oj? I "overcooked" mine too, then pureed and put in fridge but it didn't set up any thicker than sour cream. HOWEVER, after setting out several hours, it jelled up like canned. I'm sure that if you "fixed" it up, it's a great recipe. As written though, it was just a disappointment.

Yummy Sweet Potato Casserole

OMG! This is SO yummy! It is rather sweet, and I baked them in the skins first, as some reviews mentioned. I'd never baked yams, and forgot to prick skins first but they popped in the oven and they had formed almost a molasses on the inside of skin. SO good! I didn't put the pecans on, but did for the 2nd batch for my mother in-law. Everyone raved about it, I'll never make the marshmallow yams again!

Angel Biscuits II

These were good, but a little odd. They tasted more biscuit than roll, but with a consistency of rolls that had rose-then fell. VERY easy to make, came out just like the picture. Okay with butter and honey, but I don't think I'll make them again.

Ninety Minute Cinnamon Rolls

LOVED it! It took a little longer to raise but it was a little cool here. I put them into 2 fudge/enchilada pans and baking them for 20 min. was too long. Otherwise perfect!
