I put this on a large platter when serving. I do not use lettuce or green peppers. I do add cooked ground beef to the beans and I add the taco seasoning mix to the sour cream mixture. I layer in the following order..beans, guacamole, sour cream mixture, cheese, tomatoes, green onions, black olives. Great served with Frito Scoops.

Mini Cheesecakes I

I made these last weekend for a wedding reception and a school faculty party. I made a couple hundred. Some had cherry pie filling on top and the others had madarine oranges (for Chinese New Year). I used shortbread cookies for the crust. They were gone in no time. Especially popular with the men!!

Becky's Oatmeal Carmelitas

These are great. I only make one change. Instead of using caramels with the evaporated milk, I use a 17 oz jar of Mrs. Richardson's Butterscotch Caramel. I melt it in the microwave and it makes it so much easier than using caramels. You can find it by the ice cream in grocery stores like Kroger. The difference is amazing!

Chocolate Caramel Brownies

We have been making these for 22 years. They are my favorite, but I like them best when they are cold and the caramel is hard. To make it easier, use the caramel bits by Kraft. You won't have to unwrap caramels. UPDATE- An even easier method is to use Mrs. Richardson's Butterschotch Caramel (found by the ice cream at grocery stores like Kroger). I melt it in the microwave. The taste is amazing and makes them so fast to prepare.

Barbecue Ribs

AWESOME!! My grill was not working, so I finished them under the broiler (turned every few minutes and put more sauce on). This sauce is equally as good on salmon.

Chicken and Bacon Shish Kabobs

These were great! Since everyone said they had trouble with the grill (bacon causing the fire to flame up) we used our Foreman grill. That way we were able to grill both sides, they cooked evenly, and no flame! I do think the mushroom needs a bit more flavor, but I'm not sure what. The chicken is awesome in bacon.

Party Italian Wedding Soup

Update: I now add a large can of petite diced tomatoes. That really adds a new twist and great flavor. My whole family loves this soup. I did add garlic and I boil a whole chicken (and add it shredded). Wonderful!!
