Love to cook, love to eat
About this Cook
I am a busy mother of 3 beautiful but sometimes picky eaters. That does not include my picky husband! So sometimes getting meals on the table that all will enjoy can be frustrating. At least I usually enjoy my results.
My favorite things to cook
I love to cook soul food, Italian food, quick breads and desserts. I recently tried my hand at homemade bread, not the No Knead kind either. Was OK, but I'll stick with the no knead! I have lots of fun trying even if I don't always get it right.
My favorite family cooking traditions
For the holidays, my kids insist I make my special dressing (even though my daughter doesn't like it) and my mashed sweet potatoes. On New Years we like to have a seafood boil. We do like to eat out, I guess that counts as a tradition.
My cooking triumphs
Making good No Knead bread. I know it's easy, but what a sense of accomplishment to make your own bread, period. My greatest cooking triumphs include anything my dear husband will eat without complaint. He's just a picky guy, so I try to make things he will enjoy.
My cooking tragedies
I had a slow cooker recipe book and in it was this recipe for some kind of meat ball, using ground beef and rice. Was easy enough to make but when I tasted oh man. Mushy, gross and straight to the trash can. Or trying to watch TV and make a beef stew. I can still see that black ribbon swirling thru my formerly beautiful stew.....

Texas Sheet Cake V
Oh my gosh!!! I'm supposed to take this to a dinner tonight and I couldn't resist sampling. Super super delicious. Very moist, not heavy like brownies, just the right sweetness. The frosting is terrific. But definitely have your frosting ingredients ready to go when the cake gets done. It sets up fast! Used toasted, chopped almonds sprinkled on top of the icing layer. Will make again for sure.

Megan's Granola
Easy and delicious! So easy to tweak and make your own. This is my 2nd batch of this granola and I used dried apricots and shredded coconut for the fruit. I also use coconut oil and grapeseed oil for the fat. And I used another user's suggestion to cook at 300 for 25 min. Works like a charm. I also add ground flaxseed once it's cooled. Very healthy and delicious. I will be giving some away as Christmas gifts. Thanks for the recipe! :) 8/18/12-Made it again! Delicious. For the fat, I used all coconut oil. Next time, I will try not stirring it, as suggested by some. Because the best tasting granola are the very toasty pieces from the edge of the pan!
