Marinated Wild Salmon

Made some changes due to items on hand and personal preference: 1 T garlic powder instead of fresh (I know, who runs out of garlic?!) 3 T fresh basil and one 1 T fresh parsley (chopped) instead of cilantro Doubled the green onions since I had some to get rid of. Marinated over night in a gallon ziploc bag, approx. 28 hours. Grilled on a cedar plank. It was fabulous. My picky partner who says "don't add anything to fish" raved about it. Thank you for the great base recipe!

Baked Maryland Lump Crab Cakes

This recipe was delicious. The texture of the crab cakes was just right, and they were golden brown on both sides. I used a freshly homemade Old Bay seasoning recipe, and it did overpower the crab flavor a little bit. I would recommend cutting it down to 1 teaspoon if using homemade Old Bay. I also used one egg instead of the egg substitute. I sprayed the pan and the tops of the cakes with olive oil before cooking, and once again after turning. For those who have trouble finding Old Bay, look in the fresh seafood section of your grocery store. It is often found there instead of in the spice aisle. All of the markets near me carry Old Bay. `

Paprika Pork Chops

This was so easy and very good! I had to make a few changes. I did 1 tsp. butter and 1 tsp. olive oil. Instead of seasoning the pork chops as indicated, I used Paul Prudhomme Pork and Veal Magic and kosher salt. Since I discovered I was out of sour cream, I used fat free Greek yogurt instead, which worked just fine. Finally, after topping the chops with the kraut, I srinkled them with 1/2 tsp. caraway seeds each before broiling. It was absolutely wonderful.

Easy Pizza Sauce III

Good recipe with suggested addition of 2 t. basil, reduce oregano to 2 t., add 1/2 t. garlic powder, 1/2 t. onion powder, and 1/2 t. Aleppo pepper or 1 t. red pepper flakes. DO NOT ADD the baking soda somebody suggested. It ruined my first batch and rendered it inedible. I only added 1/2 t., too. Yuk.

Excellent and Healthy Cornbread

This is a good, healthier recipe. I did add 2 Tbsp. honey with the egg and yogurt, plus 1 Tbsp. minced jarred Jalapeno. This made for a moist cornbread with a hint of sweet and heat. The reviewer who mentioned to use the "sweet mix."...DON'T use a corn bread mix. You want corn meal, which is found near the flour at the grocery store. This recipe implies that the baker is adding the other ingredients that the mix would already have in it. This may be why some recipes didn't turn out. I found the recipe to be moist, with a sponge cake consistency, sweet, and delicious.

Baked Zucchini Chips

This was a great recipe! Good taste, great cooking method, good way to use up your zucchini and add a healthy side dish to grilled burgers or dogs. I suggest adding about 1 tsp. dried or 1 tbsp. fresh of your favorite herb. I tried both oregano and thyme Rosemary would also work, as would chives. YUM!

Ginger Steak

This recipe has a lot going for it. Missing from the instructions, I think, is to rub the marinade all over the entire steak, not just the top part. This would require a double amount of marinade. I also used fresh ginger instead of ground, and used reduced sodium soy sauce with no additional salt. The flavor was good, but some of the steak didn't have any, and it would be best if both sides of the steak had the flavoring. I would also broil it for 3 minutes, not 5 then turn and broil for 2 two more, for a nice medium-rarish sirloin

Spring Thyme Salmon

This recipe was very tasty and also easy to prepare. I would add about 2 tsp. honey to the marinade to add a little bit of sweetness. That will also add a nice carmel brown crunch to the exterior of the salmon. The combination of herbs and spices is very tasty, and the salt is not missed at all. This is a keeper for maximizing flavor compared to the time and effort needed to prepare it.

Baked Salmon with Coconut Crust

This is a great idea but lacks in flavor. 1st time I used the recipe verbatim...was pretty bland but had promise. Second time, I marinated 1/2 hour in lime juice AND a sprinkling of five-spice powder on both sides. I also used the previous cooks' suggestions of adding the brown sugar and butter streusel. It turned out wonderfully the second time.

Fresh Asparagus Soup

Fabulous recipe! My partner who hates asparagus soup loved this. I didn't have all the ingredients. I used organic low-sodium chicken broth instead of vegetable broth, fat free plain yogurt, and skim milk instead of soy milk. This is a great tasting soup with a reasonable amount of sodium.

Good recipe. A little dry, but I used fat free yogurt instead of mayo and spray olive oil instead of butter. I would also use more tarragon and more garlic. Red onions worked well instead of green.

Smothered Beef Short Ribs

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

This recipe has all the right basics, but lacks in flavor. I used hot chili powder instead of regular, and it still lacked a kick. However, I love the 3 cloves of garlic. I added a tablespoon of Tabasco (there's a lot of meat here) and that helped a great deal. I would also double the cumin and add another teaspoon or oregano. Also, I don't see a need for the corn meal as I like my taco meat to be loose, not mushy. I really like using tomatoes instead of water to moisten the meat.

Roasted Rack of Lamb

This is my very favorite recipe of all time, of any type, from any site or book. It is absolutely incredible! Every special occasion, we have this. Update: I am cooking this for Xmas Eve, but will reduce the salt, try Panko this time, and will let the meat come to room temperature before preparation.

Lime Chicken Soft Tacos

This recipe has so much potential. I used a small can of diced green chiles in place of the green onions and added 2 Tbsp. of tequila and a pinch of dried cilantro. Muy bien! Also, it does not take 20 minutes to "saute" the chicken. It takes about 5 minutes.
