Pumpkin Pie Flan

First time making flan and it came out great. On the advice of another reviewer, I used more condensed milk (about three to four more ounces). I used a 9" round aluminum pan and baked it for one hour in a hot water bath with a kitchen towel under the flan pan. I removed it from the oven and let it cool in the water bath before refrigerating. My family loves flan so I tried this one for Christmas and everyone liked it. As other reviewers stated, it was similar to pumpkin pie without the crust.

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill

Absolutely fabulous. This is one of the best salmon recipes out there. I added some lemon and white wine to the water used to soak the cedar plank. I also had to use dill from a jar.

Spaghetti Squash I

Wow, this is great. I used dried basil which was fine but fresh would have been better. Also used a can of diced tomatoes w/green chiles which was very good if you like spicy. Baked squash for 45 minutes with a little water in the dish as recommended by another poster. Still a little crunchy, but not much. I personally liked the slight crunch. I will try the microwave version next time to compare the consistency of the squash.

Amazingly Good Eggnog

Very good eggnog. I left out the liquor so that we could add our own as desired. After experimenting, I found Appleton (Jamaican) dark rum to be delicious with this eggnog.

Basil Shrimp

Delicious. I used Dijon mustard and extra-jumbo shrimp. I don't think the mustard was overpowering at all. The flavor was very good.

Broth Pesto with Pasta, Peas, and Chicken

This is really good and easy to make. I'll definitely be making it again whenever I am in a pasta mood. The ingredient amounts are good, but I added some extra pesto when it was all said and done because I love the stuff. The Quorn is a good substitute, but I still try not to eat it very often since it was created in a lab and I really don't know exactly what its made of (Google it for more info). If you're not used to vegetarian type substitutes like Quorn, make sure you cook it long enough. Make sure it's browned. Most things like this taste better when you cook it fully or slightly over-cook it, which is why I am guessing someone gave this a 1 star. My non-vegetarian friend loved it.
