Iced Pumpkin Cookies

These cookies are delicious. I made a double batch and half of them still aren't making it 'til Christmas dinner! Easy to make and really tasty. They're kind of like little pumpkin breads. Yum!

Almond Cookies I

I made this recipe to the note but added a teaspoon of almond extract. The cookies were good, but very light in flavor. For the second batch, I added more almond extract, more amaretto, and more nuts. Instead of grinding the second batch of nuts, I just threw in some almond slivers to give the cookie some crunch. Even with the additions, the second batch was still pretty bland. It's a nice tea cookie with a lovely texture, I just wish it had more almond flavor.

Refried Beans Without the Refry

I used this recipe as a base, but needed the refried beans in a pinch. Instead of dried beans, I just used a can of pinto beans and estimated the amount of the other ingredients. I omitted the salt, as I am on a low-sodium diet, and the jalapenos since I was mixing it with hot salsa anyway. I used about a cup of water. I just mashed the beans in the pan as I cooked them. It took about 10 minutes. They were delish!

Angel Chicken Pasta

I halved this recipe for my fiance and I, and we loved it. I used more wine than it called for (3/4 c. in total) because I found the sauce to be overly thick. It was very tasty and as others have said, could easily translate to a slow-cooker recipe. I'll definitely make this again because it was quick and easy and had a lovely flavor without being too heavy like some cream sauces.

Creamy Rice Pudding

This is delicious! I used heavy cream instead of milk and added some cinnamon, but otherwise followed the recipe exactly. It's awesome! I will definitely make this again.

Mint Chicken

This is a nice, simple recipe. I just made it for dinner and we liked it, but I would make a few changes next time. I would use less lemon juice and lots more mint. I would also use more garlic. It was a nice, summery dish and it really filled me up. I'll definitely make it again. Thanks!

Asiago Sun-Dried Tomato Pasta

I altered this recipe some, but it really did come out great. I recommend this to anyone who is used to adding their own personal touch to a recipe and doesn't want to follow it to the letter.

Lemon Muffins

They came out pretty good. I used the suggestions of making the powdered sugar/lemon glaze, which made them extra tasty. Instead of the lemon zest, I just used about three tablespoons of lemon juice because it was handy - the muffins came out just the right amount of lemon flavour. I think I'd use slightly less flour next time, though.

Easy Cheap and Yummy Casserole

my husband absolutely loved "beanie weenie pie". i didn't use a box mix for the cornbread, i made my own, but it came out great and was really quick. i only used one can of beans and one package of hot dogs, but i think next time i will use two cans of beans. my husband says it's "the best thing ever" and that he's going to request it all the time.

Peach Pie

I used a lot of the reviews for this pie when making it. I think the addition of cornstarch and leaving it in the oven for a little extra time (with the oven off) was helpful, as well as a higher baking temperature (I did 375 for 45 minutes). It was still a little messy, but it was a good tasting pie. I also added lemon juice, ginger, and a dash of cinnamon to mine. Oh, and I pre-baked the bottom crust so it wouldn't be mushy or not cooked through. I did an egg wash over the top crust, so it was a really gorgeous little pie when I was done. (In order to not burn the pre-baked bottom, I made a guard with foil over the edges for most of the cooking time, only removing it for the last maybe 10 minutes.) Though, I think there are better recipes out there, so I will either continue tweaking this one while I try to find another. Overall, it was good, but I think it could've been better.
